Kitchen Inspections

The following are among the food service establishments inspected from Sept. 17-19 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Score: 75, Grade: C

Cook wearing multiple gloves on each hand so that they could be removed one at a time between changing task. Pan of fish in the hand sink. Ice bath for salsa in the hand sink at front service area. Two pans of queso in walk-in cooler recorded at above 41 F after cooling overnight.

Employee prepare raw chicken on prep table, wiped table down with soapy water for cleaning, then proceed to conduct other tasks in the kitchen. Upon discussion with person in charge and employee, raw chicken residues were missed during cleaning and no sanitizer was used before table was ready for other food prep. Slime debris along baffle and interior surfaces of ice machine. Food employee preparing raw chicken with their apron contacting raw chicken several times during preparation then proceed to conduct different food handing duties without changing soiled apron.

Person in charge could not demonstrate training has been completed regarding foodborne illnesses and symptoms. Various items cluttering hand sink. Establishment does not have adequate sanitizer for vomit/fecal events. Three severely dented cans stored for use in dry storage area. Bowls without handles being used to dispense noodles, raw animal foods and vegetables.

Plastic components of hand washing sink handles cracked. Metal surfaces of hand sink hardware corroding and atmospheric vacuum breaker for warewashing machine detergent dispenser rusted. Metal shelf above three- compartment sink has accumulated debris and reside along grooves. Basin of kitchen handwashing sink has film residue.
