Kitchen inspections, Jan. 22-Feb. 5

The following are among the food service establishments inspected from Jan. 22-Feb. 5 by the Hall County Environmental Health Department. New rules and regulations for food service began on Dec. 1, 2007. Food service establishments will now be given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment will be conducted based on risk categorization. The risk type shall be determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.
A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a food service permit for a change of ownership, the establishment must score a 95 (A) or above with all Foodborne Illness Risk factors and Public Health Interventions in compliance.
Permits must be posted in public view at all times. Food service establishments with drive-through windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment.

Neither hand sink in kitchen or bar has paper towels available to properly dry hands after washing hands. Bar handsink has bar containers stored in basin, not set up for handwashing. Large stock pot of chicken ‘n’ rice soup held in hot-holding unit to replenish crock pot is not at required hot holding temperature of 135 degrees F (being held at 113 F). Floor in both bars and under bar ice machine (back room in bar) needs to be a smooth, durable and nonabsorbent surface — tiles are broken and buckled allowing water/food/dirt to accumulate underneath to be attraction for insects/rodents. Baseboard in bar needs to be replaced/sealed to wall surface. Floor needs cleaning under ice machine — accumulation of trash at floor/wall juncture. No hot water at sink at bar that had been the hand sink. Condiments out for customers in paper cups with spoons.

No leftovers that had been prepared and kept in establishment over 24 hours were labeled with a seven-day discard date. Silverware bins do not prevent flatware from contamination since the entire utensil can be handled by customers. Floor needs better cleaning at floor/wall juncture in dry storage - accumulation of debris along floor/wall juncture and at floor/wall and corner under three-compartment sink. Baseboard needs repair in corner behind carbon dioxide tank.

Covered waste container only in one stall of women’s restroom. Floors need better cleaning in corners, ground wheels of rolling shelving and behind equipment — accumulation of food/dirt can be attraction for insects/rodents. Vent over rack of clean utensils in dishroom dusty. Bucket under drain connection at three-compartment sink to catch water from leak.

Fluorescent light fixtures need plastic sheaths with end caps throughout service area and dishwashing area (both light fixtures).
