Kitchen Inspections

The following are among the food service establishments inspected from Sept. 25-28 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Joe Muggs at Books A Million

150 Pearl Nix Parkway, Gainesville

Score: 72, Grade: C

Manager on duty could not provide answers to questions pertaining the knowledge of preventing transmission of foodborne disease. Upon calling the Certified Food Safety Manager, it was verified that no health policy is in place for food service employees. Employee seen removing single-use gloves and storing on top of microwave after use for retrieving food. Employee asked about procedure and stated that she keeps single-use gloves for multiple uses for up to 1 hour. No sanitizer registering on quat test strips at sanitizing buckets or in spray bottle.

Most current inspection report (score of 70) not displayed for public view. Chemical sanitizing dish machine not dispensing sanitizer after multiple cycles; upon further inspection, sanitizer bottle empty. Wiping cloths found scattered on surfaces and racks throughout dining area and kitchen.

Two pans of raw shrimp stored above ready to eat foods in RI cooler. Deli slices of turkey, Alfredo sauce and olives also stored next to raw ground beef in RI cooler. Foods must be segregated according to highest minimum internal cook temperature in order to minimize the threat of cross contamination. Two tea urns in use without lids. Cut leafy greens in RI cooler not in covered container and placed directly on lid of cardboard box.

Score: 85, Grade: B

Quat sanitizer dispenser behind three-compartment sink not dispensing any sanitizer at time of inspection. Melons, boiled eggs and cream cheese not under temperature control for the duration of breakfast service and were recorded at above 41 F.

Score: 85, Grade: B

Certificate posted for CFSM showing an expiration date of June 16; no verifiable way to confirm that an employee with supervisory experience is currently certified as a food safety manager. Certificate expired and no certificate on file to back up person in charge’s claim that a manager is certified. Three buckets of icing stored directly on dirty floor of walk-in cooler. Bag of chicken breasts in lowboy across from grill presumed to be opened on Sunday night do not bear a date label. Heavy buildup of encrusted grease and food residue on back half of grill and both fryers. Floor inside walk-in cooler found to contain in one corner heavy buildup of sludge debris, along corners and bottoms of walls food waste and slime.

Observed high temp pressure washing machine reading at 32-35 psi. Pressure in high temp ware washing machine must be within 5 psi to 30 psi. Waste receptacles have lids missing.

Score: 75, Grade: C

Employee ginger drink sitting on top of counter without lid in single-service cup. Upon beginning of inspection, sole hand sink in kitchen holding a bowl of raw chicken. Crab cakes and cream cheese stored on top shelf of walk-in not labeled with a date mark. Two 5-gallon buckets of soy sauce stored directly on floor near kitchen entrance. Person in charge not wearing hair restraint during food preparation. Two knives’ blades stored in crevice between back prep table and make line cooler. Area is not cleaned and sanitized at a frequency high enough to allow for contact with food contact portion of equipment.

Establishment does not contain EPA approved for killing norovius. Rice found in walk in cooler was tempted at 53-57 F; rice was prepared and stored in cooler the night before to begin cooling. Establishment could not provide test strips for chemical sanitizing dish machine. Air gaps at back screen door.

Metal hose attached to faucet of hand washing sink, used for filling the mop buckets. Apples out on counter display rack not wrapped for prevention of contamination. Door in kitchen area leading directly to outside is not equipped with a self-closer.

Best Western Plus Lake Lanier/Gainesville

Score: 69, Grade: U

Both CFSM (spoke with on phone and not on-site for inspection) and person in charge unable to demonstrate adequate knowledge by having multiple priority violations during the current inspection; no verifiable way to confirm that food employees have been trained. Condiment packets of cream cheese and salted butter being saved for multiple services after sitting out of temperature control for the duration of breakfast operations. Packets of cream cheese and butter recorded at 61 F at the end of breakfast service. Customers also observed returning unused butter to the buffet container after their meal. No sanitizing step used for cleaning dishes.

Observed a container of melted butter found stored in under a prep table uncovered and subject to contamination. Observed encrusted material on can opener blade. Food employee wearing jewelry other than a plain ring on their hands, arms while preparing food. Insect trapping device in an unapproved location.

Score: 74, Grade: C

Observed buildup of slime on soda dispensing nozzles; various nozzles on the soda dispenser contained an accretion of slime. Potentially hazardous food cold held at greater than 41 degrees F. Multiple items in the facility without the required date marking. No conspicuously located thermometer in holding unit. Ice scoop with handle in contact with ice. Accumulation of debris in ware-washing machine and associated equipment.
