Kitchen inspections for Jan. 18-24

The following are among the food service establishments inspected from Jan. 18-24 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a food service permit for a change of ownership, the establishment must score a 95 (A) or above with all Foodborne Illness Risk factors and Public Health Interventions in compliance. Permits must be posted in public view at all times. Food service establishments with drive-through windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Chemicals stored on shelf in prep area over utensils and other items used in kitchen. Tomatoes being placed in three-compartment sink to be washed. Cloths used to wipe food contact surfaces laying on counters and prep surfaces. Prep sink has pans stored in the sink basin and on the sides. Seams on floor in walk-in freezer pulling apart from floor, creating large gaps.

Gaskets on both homestyle refrigerator, freezer units damaged. Homestyle refrigerator/freezer door gaskets all need a thorough cleaning. Accumulation of food debris, grease, dirt. Floor still needs better cleaning under and behind all equipment and in corner below three-compartment sink. A thorough cleaning is needed around wood pieces used to elevate coolers.

Vegetable slicer and container located on clean dish storage rack had food debris. Ketchup cans punctured at top of metal lid, with no cover, and kept under table for storage after pouring. Mustard plastic lid cut stored under table for storage with no cover and dispensed from cut lid. Current inspection report dated July 16, 2012, and score of 87 not displayed for public view. Food Service Permit not posted. Chest freezers have food debris on top and bottom of freezers. Lower shelves of tables had food debris. Splatter of Coke syrup on dispenser front of soda machine. Drinks for personal use stored with utensils.

Current inspection report not posted. Scoops for sugar and brown sugar stored on outside of bin in dry storage where employees walk, brush by and touching bins that need frequent cleaning. Ceiling covered with Fiberglass Reinforced Panels that have become warped in back smoker area and loose stripping between panels above cook area (stove). Linoleum floor has many areas where flooring is worn down to wood floor. Windowsills in dish washing area, between cook/dish wash area and cook area/smoker area need better cleaning. Accumulation of food, grease.
