Chicken fingers made with a mix of cornmeal, garlic powder, ground black pepper and thyme and a sauce of one egg, one egg white and hot sauce is a kid-friendly meal for children with diabetes.
“Healthy eating for children with diabetes is the same as healthy eating for all children,” said Mary Ann Clever, a registered and licensed dietitian and a certified diabetes educator with The Longstreet Clinic in Gainesville. Healthy eating habits are as important as ever since the prevalence of children with diabetes increased dramatically between 2000 and 2009, according to a recent study. The amount of Type 1 diabetes, an autoimmune disease, climbed 21 percent from 2000 to 2009, to 1.93 per 1,000 children.
