Kitchen Inspections: May 29-June 3

The following are among the food service establishments inspected from May 29-June 3 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Tortilla bowls beside steam table were stored uncovered and stacked on top of a saran wrapped product. All foods must be stored covered to prevent contamination. Two knives stored on wall mount had chipped blades and broken handles. Paint was chipping on the food contact surface of the hand held lemon juicer. All utensils must be maintained in a state of repair which allows adequate cleaning and prevents impartation of deleterious materials.

Floors and walls found with food residue. Ceiling was peeling paint at dish area. Wrong ceiling tiles were replaced over oven. Group of tiles were missing in the dish area. Fixtures of both hand sinks had heavy buildup of food residue. The fixtures of hand sinks should be cleaned often to ensure hands don’t become contaminated after washing. Water pooling in bottom of salad and pizza make line coolers. Equipment must be repaired to prevent containers of food from being in contact with non-portable standing water. Handles of cold holding units, all areas under shelving and prep tables had heavy accumulations of food debris. All non-food contact surfaces must be cleaned at a frequency that is adequate to preclude accumulations. Shelves used for drying clean pans and utensils above the three-compartment sink were heavily soiled. Drawers holding clean salt shakers and utensils had buildup of food debris. All non-food contact surfaces must be clean to sight and touch. Refuse area was littered with garbage. Large pans of grease were sitting outside the dumpster. This area must be kept clean at all times to prevent the attraction of pests and rodents. Vent hood had heavy buildup of dust. All physical facilities must be kept clean and in a state of repair. Personal items were stored above the pizza make line and cooler in the kitchen. Employees’ personal belongings must be kept separate from food and food-contact surfaces.

Nozzles of sweet tea dispensers had accumulations of mold. All food contact surfaces must be clean to sight and touch. Scoops in sugar, cornmeal and mozzarella cheese were stored with handle in product. Handle must remain above the food product to prevent contamination. There is a gap between the bar hand sink and the wall. Fixed equipment must be sealed to the wall to prevent spillage and seepage.

The only jewelry that may be worn on hands or lower arms while handling food is a plain ring such as a wedding band. No food service permit displayed. Must post most current inspection 15 feet from main entrance, 5 to 7 feet off floor and where customers may walk up to it and view from 1 foot away.
