Kitchen inspections for June 28-July 1

The following are among the food service establishments inspected from June 28-July 1 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below.

Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a food service permit for a change of ownership, the establishment must score a 95 (A) or above with all Foodborne Illness Risk factors and Public Health Interventions in compliance. Permits must be posted in public view at all times. Food service establishments with drive-through windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Cut and uncut vegetables in container in sandwich unit. Sandwich unit not maintaining foods at required 41 degrees or below and it had not been opened for use until temperatures were taken. Stew made yesterday and cooled in 2-door cooler did not reach required 41 degrees or below within six hours from 135 degrees. Splash guard between prep sink and sanitizer compartment of 3-compartment has broken off. Ice machine plastic baffel heavily scarred and no longer easily cleanable.

Can opener (homestyle) with dirty blade, peeler with food residue stored on tray below prep table in kitchen. Current inspection posted back by cash register in hallway. Must post current inspection in prominent public view. Raw wood pallets on floor for elevation in sushi bar behind counter need to be painted to seal raw wood. Clean side of dishwasher dishtable needs to be resealed to wall. Clean dishtable at dishwasher with food debris. Fan vent covers of evaporator unit in walk-in cooler very dusty. Dumpster doors left open after depositing trash. Grease barrels moved to back side of dumpster enclosure, stored on grass. Grease containers need to be stored on smooth nonabsorbent surface to allow for easy clean-up of spills. Wall at baseboard juncture in employees restroom needs repair (all the way behind sink and toilet).

Foods in walk in cooler marked with two dates: “use by Wed” and “use by Fri” — foods should only be labeled with one day, date and can be held for seven days including prep/open date. Single-use cardboard trays being used repeatedly to drain grease from fried items. Storing trays, etc. wet. Gaskets on most coolers heavily damaged. All cooler gaskets have heavy accumulation of mold, mildew, grease, food debris, water. All equipment surfaces covered in grease, dust. No cold water at the only hand sink. Grease dripping onto parking lot from grease container. Dumpster open. Floors throughout with heavy accumulation of grease, trash, dirt, food, and water; ceilings and ceiling vents encrusted with dust and grease; walls with splatters, grease, food debris. Most cove molding, tiles either missing or broken; some areas of floor tiles completely gone, leaving rubble and standing water; door, door frame rotted away; 1 foot by 1 foot hole in wall with duct tape holding in some of the broken drywall; ceiling peeling over three-compartment sink; stainless steel wall rusted away; wall caving in at floor behind cook area; several areas of FRP by cook area no longer sealed to wall, ceiling or floor. Pieces of carpet on floors in kitchen soaked with mold, mildew and a strong sour odor. Ceiling tiles not approved type and falling out of ceiling grid. One light lens broken, one missing under hood. Vent hood system dripping grease, dusty.
