Kitchen Inspections for June 19-20

The following are among the food service establishments inspected from June 19-20 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Washing vegetables in three-compartment sink; vegetable and meat sinks blocked by trash can lid, dishes, pots and pans, and radio. Still using single-use containers for food storage, after the food that originally came in the container is gone. Several surfaces with grease embedded cardboard, or dirty towels used to cover surfaces and store food, equipment, etc., on. Equipment surfaces with grease, sticky; gaskets with mold, mildew. Dumpster open; trash on the ground. Floors and walls in most areas need much better cleaning, especially under, behind equipment, etc.

Ceiling vent in kitchen, over dishwasher, with debris.

Score: 84, Grade: B

Sausage gravy hot, holding with temps at 81 degrees. Gravy had been in unit for three hours. Potentially hazardous; hot-held foods must be held at 135 degrees or higher. A stem thermometer used to check internal food temperatures missing. Boxes of waffle mix sitting on floor. Pans soaking in soapy water in prep sink. Single-service cups, items sitting on floor.

Interior of ice machine at bottom corners where sides are sealed to bottom appear to have rust and piece of metal has chipped off. Sides of ice machine exterior that join table have accumulated mold, mildew. Faucets at hand sinks for women’s and men’s restroom are unable to turn on water. No hot water available at hand sinks for restroom.

Walk-in cooler leak at plumbing line, dripping onto boxes of packaged food. Clean seal at three-compartment sink where residue has formed. Keep dumpster closed and doors closed to minimize the attraction of insects, pests. Drain is almost completely clogged at dumpster area.
