Kitchen inspections, Dec. 4-9

The following are among the food service establishments inspected from Dec. 1-10 by the Hall County Environmental Health Department. New rules and regulations for food service began on Dec. 1, 2007. Food service establishments will now be given a letter grade that coincides with a percentile: "A" (90-100), "B" (80-89), "C" (70-79), "U" 69 and below. Inspections (frequency of) a food service establishment will be conducted based on risk categorization. The risk type shall be determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a food service permit for a change of ownership, the establishment must score a 95 (A) or above with all Foodborne Illness Risk factors and Public Health Interventions in compliance. Permits must be posted in public view at all times. Food service establishments with drive-through windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Store onions at least 6 inches off the ground. Use sanitizer to wipe dinning tables. Do not wash meat in veggie sink. Pans stacked wetnested. Do not reuse containers designed to be used only once.

Foods in walk-in cooler out of temperature. Refried beans prepped at 10 a.m. above 70 degrees F after four hours in cooler. Pans, utensils, etc. stored wet.

Soap dispenser at hand sink in back kitchen broken and soap inaccessible. Containers used to hold soft serve not properly washed, rinsed, sanitized or air-dried prior to storage or use. Containers, lids, etc., with food debris and residue. Ham container placed on ice and not below 41 degrees F. Pesticide sprayer dispensers above kitchen entry and in food prep area in kitchen. Walk-in freezer making condensate on top of food containers. Nonfood contact surfaces have food residue and grease. Women’s restroom toilet not in working order, causing smell in restroom hallway. Grill food system needs thorough cleaning because of grease accumulation. Grease dripping. Floors all the way to floor/wall juncture beneath grill, in walk-in cooler, behind water heater, etc., need thorough cleaning. Hole in corner behind water heater needs to be properly sealed. Table near ice machine needs repaired, replaced due to deteriorating and absorbing water. Hatch above walk-in freeze and some vents need sealing and cleaned free of dust.
