Local Kitchen Inspections: Oct. 29 - Nov. 12

The following are among the food service establishments inspected from Oct. 29-Nov. 12 by the Hall County Environmental Health Department. New rules and regulations for food service began on Dec. 1, 2007. Food service establishments will now be given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment will be conducted based on risk categorization. The risk type shall be determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a food service permit for a change of ownership, the establishment must score a 95 (A) or above with all Foodborne Illness Risk factors and Public Health Interventions in compliance. Permits must be posted in public view at all times. Food service establishments with drive-through windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Floors in walk-ins have food, trash; floors in kitchen have grease, trash, food, water. Walls have a buildup of grease and food. Cove missing behind bag-in-boxes, loose cove in other areas.

Food handler using hand sanitizer instead of washing hands between glove changes. Drinks in proper disposable cups with lids and straws being kept on pre-table with food. Large floor fan sitting in front of hand sink that should be accessible by cooks and prep personnel in cook area of kitchen — hand sinks must be accessible at all times for employee use. Ice machine with mold growth on edge of baffle and some inside top of ice machine. Tea nozzles with mold buildup. Walk-in cooler cannot maintain and/or cool foods to required 41 degrees or below. No chlorine test strips available to monitor sanitizer strength (chlorine) used in cloth storage containers. Chemical sanitizing dish machine not reaching required wash temperature of 120 degrees. Shelving peeling and needs cleaning in walk-in cooler — food debris hanging off shelves. Floor fans throughout kitchen with dust, food debris. Floors need better cleaning at floor/wall juncture throughout. Floors need repair around drains and along floor/wall juncture where grout had been damaged. Fan mounted on wall in dish room is caked with dust that can blow into clean kitchenware stored below. Ceiling needs cleaning above prep, chicken breading area. Many personal items stored in food handling areas.
