Kitchen inspections for June 7-9

The following are among the food service establishments inspected from June 7-9 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: "A" (90-100), "B" (80-89), "C" (70-79), "U" 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a food service permit for a change of ownership, the establishment must score a 95 (A) or above with all Foodborne Illness Risk factors and Public Health Interventions in compliance. Permits must be posted in public view at all times. Food service establishments with drive-through windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Food handlers not washing hands between many glove changes, or at all, as required. Only hand sanitizer available for hand cleanser in restroom. Can of RAID on top of freezer in kitchen for use with flies in establishment. Bag of frozen chicken wings laying in wash compartment of three-compartment sink for thawing. Can thaw meat in three-compartment sink as long as sink compartment is cleaned and sanitized before use, the meat is put into a container and thawed under running cool water. No food temperature measuring device available to monitor cooked, hot and cold-held foods and reheated food temperatures. Butcher display cooler with condensate dripping off drip pan inside into pan that contains hot dogs and onto foil covering items in cooler. Current inspection not posted. Gloves not always changed between tasks or when soiled. Shelving covered with foil that is worn and ripped and covered with food debris. No sanitizer test strips available to monitor the strength of sanitizer to be used in three-compartment sink and cloth storage containers. Personal items on prep table with food prep.

Mold and mildew on ice machine baffle, slicer had dried food debris on blade and guard. Cooling methods not properly implemented to ensure foods cooled properly to temperature requirements. Coke nozzle gun holder and ice scoop holder at bar had food debris, mold and mildew in holder. Spoons, knives and forks on kitchen prep table, stored in silverware holders with lip, food contact surface pointing up. Wooden knife block is not approved material for food contact surface or knife storage due to not being able to clean and sanitize thoroughly. Porcelain bowl used for flour scoop located in bulk floor container. Lids and several containers brittle and breaking. Sanitizer test strips not available for chlorine and ammonium chloride sanitizer.
