Kitchen Inspections for July 5-11

The following are among the food service establishments inspected from June 19-20 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Score: 75, Grade: C

Food handlers working to prepare shakes, ice cream, drinks, add fruit to drinks, etc., wearing gloves but not hand washing between glove changes. Large buildup of mold inside ice machine on metal baffel, sides and inside ice bin lid. Lemon chopper with dried lemon on blades, stored under prep table. Can opener blade with dried food debris. Food handlers wearing bracelets (numbered bracelets for scanning orders). Ice scoop handle buried in ice bin at soda dispenser ice bin. Single-serve items, straws, condiments in packages, food wrappers stored in bins, containers with accumulations of food debris. Three-compartment sink needs cleaning in all compartments; greasy, food debris. Cooler shelving, outsides of equipment, cooler (reach-in) door gaskets, insides of coolers (reach-in) in old drive-thru area, freezers in cook area, ladder at back door with accumulation of dirt, grease, food debris. Restroom floors need a good scrubbing; paper, dirt stuck to floor and clogging floor drains. Floors throughout kitchen, storage, walk-in cooler, freezer need better cleaning; accumulation of trash, food, grease especially in corners behind equipment; shelving in walk-in cooler and accumulation of food, ice on floor in walk-in freezer. Entry doors to facility do not have tight seal, top or sides to prevent the entry of insects.

Mold, mildew on most dispensing machines, icemaker, etc. Nearly all surfaces in kitchen are covered with grease, are sticky, dusty, etc. All floors, walls and ceiling surfaces need much better cleaning, much more frequently, to prevent insect, rodent attraction and contamination.

Sanitizer solution for wiping cloths tested zero ppm per test strips (chlorine). Floor grout at three-compartment sink and ice machine is missing grout, causing water to accumulate and not go to floor drain. Ceiling tiles are not approved restaurant-style hard plastic durable, washable tiles. Existing tiles are damaged and peeling. Bare wood by mop sink and below freezer. Light shields throughout kitchen broken, cracked.

Clean lids better at line cooler; tops have food residue, dried at opening. Clean chopper in back. Clean can opener. Keep utensils clean to sight and touch. Clean lids that may contaminate food every 24 hours at cooler line with dried food on lid tops. Onions stored on floor of walk-in cooler. Do not store peppers under opened drink bottles. Personal Powerade bottle in walk-in cooler on shelf, above dough, had been opened and closed. Keep wiping cloths in sanitizer at proper concentration (per manufacturer for QUAT) between uses. Clean fan guards in walk-in cooler, shelves and door track to glass cooler. Clean pizza holding shelves beside cooler. Clean bottom of line cooler. Dry mops after use. Clean floor in back room debris on floor. Repair coving at wall adjacent to three-compartment sink.

Keep a probe thermometer to measure temperature of cooked potentially hazardous food. Keep thermometer in small cooler with milk. Clean outside of microwave, shelf under SS utensil area and shelf in silver cooler. In toilet facilities that have exit doors with handles or knobs that must be touched to open, sanitary towels must be provided. Two dumpsters in use outside; one has broken lid, one has missing drain plug. Also, area around dumpster needs to be maintained better. Trash and debris around dumpsters. Use designated area for pocketbook.
