Kicthen inspections for Dec. 2-18

The following are among the food service establishments inspected from Dec. 2-18 by the Hall County Environmental Health Department. New rules and regulations for food service began on Dec. 1, 2007. Food service establishments will now be given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment will be conducted based on risk categorization. The risk type shall be determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.
A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a food service permit for a change of ownership, the establishment must score a 95 (A) or above with all Foodborne Illness Risk factors and Public Health Interventions in compliance. Permits must be posted in public view at all times. Food service establishments with drive-through windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Prepared lasagna in reach-in cooler past seven-day discard date. Containers of sanitizer for storing cloths used to wipe counters and equipment with visible food debris (cloudy water). Although cooler floor has been cleaned thoroughly, the floor is still rusted and no longer meets requirements of durable, cleanable and nonabsorbent. Gaskets on pizza make-line doors need a good cleaning; accumulation of food debris in ridges.

Hand sink in wait station area with drainage rack in front of it and no soap or towels available at this hand sink. Used utensils stored under prep table, knives with dried food debris stored on knife magnet above prep sink. Prep table with dried food residue. Chicken stored in contact with grocery bags; cleaned vegetables stored in grocery bags or in boxes they had been shipped in. Wiping cloths not being stored in sanitizer between uses. No sanitizer test strips available to monitor the automatically dispensed sanitizer at three-compartment sink. Dumpster area littered with trash and food; Dumpster door left open. Drinks in regular cups with straws in kitchen.

Repeat violation: Storage of food and other items on floor. Cleaning cloths on floor and other surfaces. Ceramic tiles broken on counter. Counters need a thorough cleaning. Repeat violation: Floor has an accumulation of trash, ground coffee, dirt, etc.

Single-serve cups in sleeves stored on floor in drive-through. Dumpster area greasy in front of grease container that is extremely full. Light lens cracked in breakroom where bread is stored. Buckets of sanitizer for storing cloths sitting on floor. Floors need cleaning behind shelving in basement (along walls) under self-serve soda dispensing area; food and trash have accumulated underneath and can be attraction for insects/rodents. Floor in basement is peeling. Floor needs cleaning under soda dispenser in drive-through.
