Kitchen Inspections

The following are among the food service establishments inspected from Sept. 6-8 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Score: 91, Grade: A

Open can of energy drink stored above food items in walk-in freezer. Neither of the rear two hand sinks stocked with paper towels and no paper towels nearby. Cooked egg patties in walk freezer in bearing Aug. 30 date label still kept for use. Bottoms of hot holding cabinets contained large amount of food debris.

Score: 94, Grade: A

No copy of latest inspection report in the drive-thru window. No handwashing sign provided at a hand sink used by food employees. Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength.

Five Guys Burgers and Fries

1122 Dawsonville Highway, Gainesville

Score: 96, Grade: A

Food service receives key drop food deliveries (food delivered outside normal business hours) where delivery company is required by agreement to take the temperature of several time and temperature control for safety food items and record temperatures on a log or on receipt to be kept on site for at least six months for review by Health Authority. Receipts were found to contain three preprinted spaces for food item temperatures but no receipts on site were found to have temperatures recorded.

Just cut deli sliced cheese stacked together and wrapped tightly in plastic wrap not effectively cooling over a 45-minute assessment. Deli meats stored in walk in cooler sitting under leaky condenser. Employee cellular phone stored on prep table beside slicer.

No soap or paper towels located at hand washing sink. Observed torn packages/bags of food exposing the contents to contamination.

Score: 95, Grade: A

Manager lacking proof of Food Manager Certification; the person in charge was unable to produce the required documentation at the time of the inspection. Observed accumulation of debris in ware washing machine and associated equipment.

Score: 94, Grade: A

Ice cream scoops ready for use stored in container with small amount of water and inside bottom of container with accumulation of pink mold. Painted decorative piece of crockery used to store ice scoop in between uses. Screen door to screened in porch and main kitchen with gaps between slats that cover bottom of door that may allow for insect entry into the facility.

Arby’s No. 1030

634 Shallowford Road, Gainesville

Score: 91, Grade: A

Observed buildup of mold inside ice machine around the edge of ice chute and rust built up on the interior roof of ice machine. Prior inspection score of 88 not posted at front or in drive-thru window. Outsides of metal containers stored on clean shelf rack with sticker residue on many pans.

1039 Athens St., Gainesville

Score: 63, Grade: U

No person in charge present at food facility; no Certified Food Safety Manager posted and PIC not able to provide proof of CFSM certification. Hand sanitizer being used instead of soap; paper towels not provided next to hand-washing facilities. Bag of thawed chicken breast in hand sink. No procedure in place for vomiting and diarrheal events on site. Mozzarella cheese found in homestyle refrigerator in back storage had mold growing within it and peppers found in homestyle refrigerator in back storage spoiling within bag. Kitchenware and utensils not being sanitized after washing and rinsing with no bleach on-site for sanitizer. No food thermometer present at time of inspection. Three-compartment sink contained roaches upon entering food facility.
