Kitchen Inspections

The following are among the food service establishments inspected from Sept. 18-22 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Domino’s Pizza No. 8974

3606 Thompson Bridge Road, Gainesville

Score: 87, Grade: B

Certified Food Safety Manager certificate not posted in public view. Stack of plastic containers found wet-nested on wire rack behind three-compartment sink. Fly accumulation noticed within the facility around the three-compartment sink.

Score: 73, Grade: C

Owner (person in charge) of facility not able to adequately answer questions regarding food safety procedures. Using customer napkins for drying provisions at hand washing sink. No thermometer present on food facility. Didn’t have current inspection report posted. Personal frozen food items found within cooler not listed on restaurant menu. Still observing roaches inside facility.

Score: 98, Grade: A

Shelf to the right inside walk-in cooler has broken corner causing food containers to slide when bumped and can potentially fall onto floor. Accumulated dust and food debris on racks and shelf attachments inside walk-in cooler. Accumulated spilled grease down the side and puddled in front of the grease container. Accumulated debris and residue along floor/wall juncture and under equipment in back hallway and kitchen areas.

2121 Friendship Road, Buford

Score: 84, Grade: B

Many of the utensils and lexan containers on air drying rack with wet and dried food debris on them. Six half-gallons of buttermilk under biscuit station found with best by date of Sept. 19. Four boxes (24 half-gallons) of buttermilk in walk in with best by date of Sept. 19. Mayo, biscuit mix boxes found directly on floor near the break area, and wire storage racks. Chicken filet box also found directly on floor in walk in freezer. Floors, coving, walls, tops of paper towel dispensers and hand sinks with heavy accumulation of flour and dried food debris.

Score: 90, Grade: A

Hot water sanitizing dish machine not running within the required 5-30 PSI range. Pizza sauce cooling in shared area reach-in cooler not experiencing a drop in temperature quick enough using current methods to reach the required 41 F within four hours of prep. Single service lids for cups stored in boxes stacked on ground next to ice machine.

Inside of ice machine with very prevalent buildup of mold on walls of bin, chutes.

Score: 95, Grade: A

Pans of chicken, hashbrowns and potato wedges in reach in freezer stored without covering. Outsides of clean pans built up with leftover sticker residue.

2740 Fran Mar Drive, Gainesville

Score: 94, Grade: A

Clothes soaked in sanitizer and rung out sitting in container and used for cleaning tables. Freezer has built up ice on drain and both reach through cooler had water leakage. Sprayer used to clean tilt skillet with buildup of mold inside rim of sprayer. Floor next to mop sink in chemical storage had buildup underneath rubber mats. Ventilation vents above hot holding units and above food prep sink had accumulation of dust and gunk.

Score: 89, Grade: B

Observed buildup of slime on soda dispensing nozzles. Multiple nozzles on the facility’s soda dispenser container contained an accretion of slime. Observed buildup of slime in the interior of ice machine. Observed containers of previously cooked chicken inside the facility’s walk-in cooler without any indication of the prepared date; further investigation revealed that an employee prepared the items in question on Tuesday (Sept. 19). Observed worn, torn and/or soiled floors, carpeting; tile flooring inside the facility’s walk-in cooler was soiled with grease and food debris.

Score: 95, Grade: A

Observed old labels stuck to food containers after cleaning. Multiple equipment items and utensils contained old labels and had been placed on an air-drying rack after cleaning. No handwashing sign provided at a hand sink used by food employees. No handwashing signage in the facility’s women’s lavatory.

Observed an accumulation of mold in the interior of ice machine. Observed food employee wearing jewelry other than a plain ring on their hands, arms while preparing food. Observed an accretion of flies throughout various areas of the establishment.
