Kitchen Inspections
The following are among the food service establishments inspected from Sept. 10-14 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Establishment had no written vomit/diarrheal procedure in place in case the event were to occur. Drink dispenser with small mold particles inside of the sprite and coke dispenser nozzles. Raw chicken and raw bacon located at the bottom of a one-door standing cooler with date labels of Sept. 7 that were stored over night and had temperatures ranging between 48 F and 54 F. Many live and dead flies located at the bottom, inside of the standing one-door cooler beneath the out of temperature chicken.

Person in charge could not produce documentation about employee health nor could he show evidence that employees have been trained on reporting any diseases that can been transferred from employees to food. No procedures for employees to follow during a fecal/vomit incident in facility. Dish machine was observed to register 0 ppm of chlorine sanitizer when measured with a chemical test kit. Raw chicken cooked to 160 F on the grill. Consumer Advisory was observed on menus not all in capitals and less than size 8 font. Live roaches underneath a wooden box in the back chemical room.

No written vomit procedure posted/located or EPA-regulated chemical in establishment. Person in charge went to the walk-in cooler and removed melted cheese stored in a container which had a date label of Sept. 7. The cheese had black mold forming on the plastic wrapping. Chopped lettuce which had been prepped the day before and stored in a bag without proper date labeling, as well as ground beef, beef steaks and bacon without proper labeling of what it is or date labeling.

Cooked chicken in prep top cooler above 41 F or below.

Person in charge could not demonstrate knowledge and responsibility to an employee health reporting agreement. Bucket and washcloth in the hand sink. Individual servings of salad stored in the merchandiser cooler uncovered. Sanitizing dish machine did not register any sanitizer when ran twice. Multiple sushi rolls above required 41 F. No written procedure on file for sushi rice which is kept out at room temperature using TPHC (time as public health control). Fried octopus stored in reach-in cooler for over 24 hours with no datemark indicated the date of preparation or date to be discarded.
