Kitchen Inspections

The following are among the food service establishments inspected from Oct. 3-6 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Brenau Dining Services Tea Room

1 Centennial Circle, Gainesville

Score: 90, Grade: A

TCS (temperature control safety) foods holding at above 41 F in display case cooler at Grab n Go section. Temperatures were recorded from 45 F to 50 F. Time and temperature control for safety foods must be cold held at 41F or below. Restroom door opening to room between walk-in cooler and dish washing room not equipped with a self closer.

Brenau University Dining Room

Score: 85, Grade: B

Sternos used on buffet line to hot hold chicken, rice and beans holding at less than the required 135 F. Pizza sauce in prep top cooler ranging from 45-50 F after 4 hours cooling. Two trays of deli meats found in same prep top cooler, unable to drop in temperature over a 1 hour, 15 minute span. Salsa and pico de gallo sitting uncovered in front of sneeze guard on buffet serving line. Apples at salad bar offered to consumers unwrapped without protective cover or tongs.

Fairfield Inn and Suites

1755 Browns Bridge Road SW, Gainesville

Score: 78, Grade: C

No verifiable way to confirm that food employees have been trained and informed of their responsibility to report to the person in charge, information about their health and activities as they relate to diseases that are transmissible through food. Condiment packets of cream cheese and salted butter being saved for multiple services after sitting out of temperature control for the duration of breakfast service. Shredded cheese, boiled eggs, and melons not under temperature control for the duration of breakfast service and were recorded at above 41 F. TCS foods must be cold held at 41 F or below.

Score: 96, Grade: A

Staging area for dirty utensils full, and dirty utensils placed against areas used for storing clean utensils. Numerous fruit flies observed in front service area and restrooms.

Unsweet tea urns had large buildup of slime debris in nozzle and chute.

Score: 84, Grade: B

Employee drink mug kept out on counter beside coffee machine. Temperature of grits kept in prep room steam well overnight recorded at 124 F. Grits in steam well beside grill recorded at 127 F. Time and temperature control for safety foods must be hot held at or above 135 F. Upon arriving for inspection, eggs stored above grill not properly marked with correct timestamp. Large amount of food debris found on ground. Raw egg broken on ground near reach in cooler. Chunks of lettuce accumulating underneath grill. Other food particles found on ground between waffle station and prep top cooler.

4535 Oakwood Road, Oakwood

Score: 82, Grade: B

Employee observed eating waffle and drinking milk out of bottle in main kitchen. Homestyle fridge in kitchen area recorded holding butter at 45 F and cream cheese at 44 F. Sausages and hashbrowns kept in steam well at self-service buffet found at temperatures between 117 F-134 F for sausages and 118 F-147 F for hashbrowns. Oatmeal found in crock at 126 F. Time/temperature control for safety foods must be hot held at 135 F or above. Liquefied waffle batter in homestyle fridge unable to effectively drop in temperature to meet cooling parameters. Inspection report displayed is not the most current.
