One-door sandwich unit not keeping time and temperature control for safety foods (TCS) at required 41 F or below: sliced tomatoes, cheese, shredded lettuce in top of unit with temperatures of 44 F-49F. Precooked meat, shredded lettuce, sliced tomatoes inside unit with temperatures 46-60F. From inspection at restaurant Aug. 23 (and same issue found today on trailer), many food items are prepared several days in advance at restaurant and these items are served on the trailer but these food items are not labeled with the day or date of preparation. Main wiping cloth in use in the food handling area was used multiple times to wipe prep surface and then laid aside on prep surface. No test strips located for type sanitizer in use on trailer for storing cloths used to wipe food contact surfaces between uses. Many flies inside the trailer.
