Kitchen Inspections

The following are among the food service establishments inspected from Oct 10-13 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Oct. 10

Chicopee Woods Elementary School

2029 Calvary Church Road, Gainesville 

Score: 90, Grade: A

Smoked ribs and egg rolls reheated and then cooled back down on Oct. 5 found at 49 F and 50 F, respectively. Verified with Certified Food Safety Manager that foods were in fact cooling since the date on the label. TCS (temperature control safety) foods must be cooled from 135 F to 70 F within 2 hours and to 41 F within a maximum of 6 hours cooling from start. Restroom door and locker room door connecting to food service prep area both opened.

Wiping cloths stored outside of buckets under counters. Observed excessive ants and trash buildup, debris around dumpster area.

Observed employee smoking a cigarette enter back kitchen door and put cigarette out in a full ashtray located in back room used for slicing foods, storing foods, storing clean equipment/utensils and single-service items. Slaw prepared with ambient room temperature ingredients and placed in covered large bus tub for storage in walk-in cooler. Method used for storing slaw (covered large bus tub) does not allow for cooling in accordance to time and temperature criteria. Warewashing machine reaching 111 F max temperature when cleaning. Manufacturer’s requirement is a minimum of 120 F.

Ice machine had accumulations of residue. Soda nozzle and diffusers found to contain mold accumulation. Observed reach in cooler had leak and found standing condensate at the bottom of the cooler.

Upon beginning of inspection, observed employees throughout kitchen walk into dry storage room, don gloves  and proceed to handle and prepare foods at cookline. Observed employee wearing gloves rinse water over gloved hands at hand washing sink and return to cook line. Hand sink located between warewashing area and cookline blocked with bulk food containers and water supply turned off. No soap available at hand washing sinks located at bar, employee restroom or warewashing area. No paper towels available at hand washing sinks located at back prep area, warewashing area, employee restroom and server station area. Accumulated grime, debris in tea urn nozzle spouts and behind baffle of ice machine. Food debris and residues on stacked pans and containers stored on clean utensil shelves. Cut tomatoes cold held on ice 57 F. Foods must maintain 41 F or less when cold held. Numerous pans and containers of prepared foods in walk-in cooler have no date labels. Observed foods with prep dates greater than 7 days ago in coolers.

Prep Top cooler and beneath prep top cooler holding potentially hazardous food items. Observed shredded cheese, sliced cheese and raw eggs above 51 F. Cheese was prepped Oct. 10 and stored over night to cool and did not reach proper cold holding temperature. Observed mold in both main kitchen and eating area drink dispenser nozzles. Observed mold above baffle in ice machine.

Hand sink in dish pit with empty soap dispenser. Flats of eggs in walk-in cooler stored on shelf next to box of mushrooms and green peppers and over box of whole tomatoes and below tomatoes a shelf of cakes; store raw animal foods below and away from ready-to-eat foods to prevent cross contamination. Chemical sanitizing dish machine not dispensing any sanitizer during final rinse.

Multiple plastic containers housing raw hamburger patties and country ham without lids or plastic wrap in the three-door cooler. Hot water sanitizing dish machine showing a pressure of 100 PSI during rinse and wash cycles; water pressure for dish machines must be maintained between 5-30 PSI. Two half gallons of chocolate milk in use at front food service found with best buy date of Oct. 10. Entire crate from the same batch also expired, found in walk in cooler.

Observed employee handling soiled equipment or utensils then engage in food preparation, handle clean equipment or utensils or touch unwrapped single-service items without washing hands. Employee was observed working in the grill-prep area of the establishment; employee temporarily departed from station and was seen handling utensils and equipment near the dishwashing station. Employee returned to the grill area without washing hands and attempted to re-engage in food preparation by utilizing previously used gloves. Wiping cloth chlorine sanitizing solution not at proper minimum strength; solution in question did not reach the required manufacturer’s standards.

Top cooler of pizza station holding mozzerella cheese at 50 F, sausage at 50 F and shredded cheese at 46 F. Marinara sauce stored beneath recorded at 50 F. Time and temperature control for safety foods must be cold held at 41 F or below. Pizza stored under heat lamp not directly in contact with hotplate and recorded at 124 F. Multiple pans of smoked ribs in pass-thru recorded at 127-133 F. Time and temperature control for safety foods must be hot held at 135 F or above. Apples provided to customers in bowl at checkout not wrapped to prevent possible contamination. Outside surfaces of large lexan containers stored in banquet prep area contain leftover sticker residue from date marking.
