Kitchen Inspections

The following are among the food service establishments inspected from June 18-22 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. June 18

Pueblos Mexican Cuisine 

1310 Dawsonville Highway, Gainesville 

Score: 88, Grade: B

Uncovered produce in the walk-in cooler stored underneath the compressor which had been leaking water and contaminating the food. Two sanitizing buckets with sanitizing solutions containing less than 10 ppm chlorine. Pineapple salsa and coleslaw prepared the previous day in the reach-in without a label with the day of preparation.

Score: 91, Grade: A

Raw beef in the walk-in cooler that had been prepped on June 10. Flan in the walk-in cooler and merchandiser cooler that had been prepared June 16 without a datemark indicating the date of preparation. Large volume of salsa verde in a large container left out at ambient temperatures to cool.

Employee putting raw pork on grill using gloved hands and touching refrigeration unit doors and handles with the same pair of gloves still on. Sanitizing bucket with chlorine sanitizing solution had less than 10 ppm chlorine.

Napoli’s Pizza

3640 Mundy Mill Road, Gainesville 

Score: 85, Grade: B

Raw garlic and oil mixture sitting at room temperature with no intent for time as public health control. Container of ricotta cheese in the pizza make line cooler being cold held above 41 F for over four hours. Marinara sauce left out at room temperature for over four hours with no intent for TPHC being used for pizza. Multiple time temperature control safety items in the walk-in cooler that had been prepped the day prior with no date mark to indicate the day or disposition or preparation. Tongs used for meatballs stored on top of the container lid of the bain-marie. Trash receptacle in employee restroom did not have a lid; both doors to the trash receptacle open.

Previous inspection dated from June 12 not posted in public eye view. Top and side of under the counter grease interceptor at three-compartment sink has accumulated grease like buildup. Dumpster receptacle with open lid as well as accumulation of debris around and behind dumpster.

Score: 96, Grade: A

Open container of grapes on prep table in kitchen while employees were cooking. Grapes are not on the menu or an ingredient in any of the facility’s food items.

El Sombrero No. 3

1792 Browns Bridge Road, Gainesville 

Score: 81, Grade: B

Dented can stored with unadulterated cans. Raw shrimp, chicken and beef stored in pans located within a two-door standing cooler with no lids, half-covered lids. Multiple drink dispenser nozzles with mold accumulation and debris. Various containers located inside of walk-in cooler without proper date labeling and/or time of which the item was cooked or prepped.

Garlic and oil mixture made three hours prior at ambient temperatures temping at 71 F in the walk-in cooler.
