Score: 94, Grade: A

Open employee cup without a lid on prep table and various plates of employee food around the kitchen stored next to pot, pans above the stove/grill area, and also on a prep table next to cloth wrapped utensils. No QAC sanitizer test strips found in establishment. Dumpster receptacle missing drain plug.

Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Copies of the rules are available at the Hall County Environmental health Office. The rules and regulations are also available online at dph.georgia.gov/environmental-health-inspections.

Employee unaware of the need to wash hands upon entering the kitchen after leaving the restroom. Walk-in cooler maintaining an ambient temperature of 58 F and not able to sufficiently cold-hold TCS (time-temperature control safety) foods. Open soda can belonging to employee out in the food preparation area. Sliced tomatoes and lettuce cold-holding in the walk-in cooler stored uncovered and left open to potential contamination. Dough press with excessive buildup of grease dripping from joints and outer surface. Multiple flies emerging from the prep top cooler once it was opened.

Food safety training is needed for all staff members assigned food service responsibilities as part of their job duties. No Certified Food Safety Manager on staff. Utensils being rinsed off and stacked, stored in only hand sink and blocking ability for food employees to wash hands. No paper towels available at hand sink. Unused portion of waffle batter in dispenser being kept after breakfast period ends and placed in refrigerator for next day use. Employee handing unwrapped foods without a hair restraint. Employee wiping surfaces of countertops and food equipment at buffet with damp cloth stored slung over her shoulder between uses.
