Kitchen Inspections

The following are among the food service establishments inspected from Aug. 14-18 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Score: 88, Grade: B

No verifiable way to confirm that employees have been trained in responsibility to report to the person in charge about their personal health and activities as they relate to diseases that are transmissible through food. Pans of chicken tenders stored in freezer uncovered. Mold buildup on walls and top portion of ice machine. Wall behind ice machine, rear hand sink and in walk-in cooler with a build up of mildew and debris. Inspection report posted in walk-up area, but not also in drive thru window.

Score: 84, Grade: B

Ice machine in kitchen contains build up of mold behind baffle and along chute. Dinner menu not marked with a reminder statement for items which are both served undercooked. Large quantity of ketchup prepared in house from scratch kept five days after discard date without any indication of dates ketchup may have been frozen. Two  stacks of pickle buckets stored directly on floor or walk in cooler, Inspection report covered up by rack at host station and not in public view; food service permit hung on wall at bar opposite of entrance above 7 feet.

Score: 86, Grade: B

No test strips (test kits) available for the monitoring of sanitizer concentration in the sanitizer compartments of three-compartment sink in the kitchen, four-compartment sink in the bar and the cloth storage containers used to store cloths used to wipe food contact surfaces between uses. Slicer found with buildup of dried food debris on back of blade, behind removable back guard and dried on blade stand. No written procedure or time markings to indicate monitoring of precooked pizzas to be held on a rack without temperature control to be used for slices ordered and finished with customers requested toppings and put into oven to warm for immediate service. No irreversible registering thermometer available to verify dish surfaces are reaching required 160 F during final rinse of hot water sanitizing dish machine.

Could not furnish any documentation verifying that all employees had been trained in reporting illnesses as it relates to diseases that are transmissible through food. Walls of ice machine behind baffle and chute portion with a heavy buildup of mold. Temperature of cheese stored in front food service ice bath recorded at 53 degrees F. Time and temperature control for safety foods found in two-door unit found at temperatures ranging from 44 F to 47 F, when it should be held at 41 F or below. Three-compartment sink found with food buildup, grime, and/or mildew around drains and along seams.

Score: 87, Grade: B

Lettuce slicer built up with grime and food debris on edges of blade. Cutting board contained build up of mildew. Tomatoes in makeline cooler recorded at 52-54 F and did not drop in temperature after checking a second time 30 minutes later. Time and temperature control for safety foods must be cold held at 41 F or below.

Tea urn nozzle and spouts that had been placed in clean dishes for use contained a buildup of mold and mildew when disassembled. Large tub of marinara sauce in walk in cooler found at 45 F over 12 hours after cooling process began. Dining room ceiling leaking water from outside.

Score: 98, Grade: A

Accumulated metal shavings found in crevice on face of table mounted can opener. Accumulated food debris between top of prep cooler and under granite cutting surface; accumulated food residues along handle areas of soap dispensers and cooling equipment; accumulated food debris on handles of hand washing sink at cookline. Backsplash wall behind flip-top coolers and around cookline hand sink has accumulated food debris.
