Kitchen Inspections, week of Oct. 12-18

The following are among the food service establishments inspected from Oct. 12-18 by the Hall County Health Department, as appeared in The Times Oct. 28.

The department scores on a 100-percentile scale, with 85 and above considered passing. Kitchens are inspected at least every six months and are required to post their score sheets in public. A new establishment that has never served food must score a 100 to receive an initial report. When a restaurant changes ownership, another inspection is required. The establishment must score a 94 or higher to receive a new permit. To register a complaint against a restaurant, call the health department at (770) 531-3973.

Oct. 12

Dockside Grill, 6900 Holiday Road, Buford

Score: 93

Cheesecake stored in beverage cooler. Beverage cooler heavy for a day and cooler struggling to maintain 41 degrees or below. Prep cooler struggling to maintain 41 degrees or below and leaking condensate. Three-door salad cooler with condensate leak. Silverware for service not inverted. Floors need better cleaning under ice machine and cook line. Soda gun holster needs to be cleaned and sanitized as frequently as soda gun.

Waffle House, 7415 Spout Springs Road, Flowery Branch

Score: 92

Pans with residue and being wiped out with paper towel then used to cook with. Eating utensils in containers with lint and residue on utensils due to being wiped off with cloth. Ice scoop on floor behind ice machine. Cloths used to wipe food contact surfaces not being stored in sanitizer between uses. Pile of dirty cloths stored on shelf underneath dish machine area. Bottom of reach in coolers with residue inside. Floors underneath three-compartment sink, dish machine and throughout kitchen need to be kept clean to prevent insect and rodent attraction.

Several rooms with tub peeling paint. Tubs need to be cleaned to remove soap residue. Shower curtain needs replacing in room 355. Room 267 needs to have bulbs replaced in lights over vanity and in bathroom. Lights do not work. Debris (trash) behind dressers and underneath beds. Drawers with residue. Sofa in room 267 needs to be repaired to fix holes in cushions and frame. Beds made up without changing sheets. Sheets with hairs, dirt and stains. Mattress with pads with debris. Rules for continental breakfast not being followed.

Score: 87

Insides of coolers including door gaskets and around frames with residue and mold. Sides of fryers, shelves, cart holding chest-style freezer, fans near storage shelves and floor mixer with residue. Vents over fryers and pizza oven with excessive amounts of dust and debris. Dust accumulation of spigots and lights over fryers. Personal items on shelves with items for customers.

Score: 93

Prep surface of sandwich board being wiped by cloth that is laid to side of prep surface after each use. Food accumulation in cloth. No detectable amount of sanitizer (chlorine) in cloth storage container in back kitchen area. Grout damaged between tiles under grill allowing for grease/water/food accumulation. Baseboard pulled away from wall beside grill allowing grease and food to accumulate. Hood vents (grease extractors) do not fit tight enough to seal opening allowing for grease to accumulate up in hood along left end.

Overturned drink carriers and bread racks do not elevate storage six inches off floor to protect storage from any possible contamination. To allow for easy cleaning of floor underneath wood rack elevating drink/oil storage in back room (mop room) needs to be painted to seal wood. Mixer shafts not being sanitized after use. Soap dispenser broken at cook line hand sink.

Clean utensils stored between three compartment sink and shelf. Back enclosure where trash is stored needs to be cleaned up.

Hot box doors still do not fit tight which can allow heat to escape and temperature to fluctuate in cabinet. Truck needs correct mobile name (name on permit) and the permit number also needs to be stenciled on truck.

Dumpster closest to road with large gash in bottom allowing for large amount of liquids and trash to leak out. Ansul system (fire suppression system for hood) has been tagged non-compliant since March 29, 2007.
