2 whole wheat soft tortilla shells
1 cup grilled chicken
1/2 cup low fat cheddar cheese
Avocado as spread
On a whole wheat tortilla shell, combine 1 cup of grilled chicken and 1/2 cup low-fat cheddar cheese. For an added nutritional bonus, use avocado as a spread.
Place second tortilla on top.
Place the quesadilla in a nonstick skillet or in a panini press. If you use a panini press, simply close the press and wait 3 to 5 minutes, or until the sides are slightly brown and the cheese is melted. In a skillet, flip the quesadilla every 45 seconds or so, until the sides are slightly brown and the cheese is melted.
Cut the finished product into quarters and place inside a tupperware for easy storage until lunch time.
