6 tablespoons extra virgin olive oil 2 tablespoons fresh lemon juice 1/2 teaspoon chopped garlic 1 teaspoon red wine vinegar 1/2 teaspoon oregano 1/2 teaspoon dill weed Salt and freshly ground black pepper 3 large plum tomatoes seeded and coarsely chopped 1 cucumber, peeled and chopped 1/2 red onion, thinly sliced or coarsely chopped 1 green pepper, coarsely chopped Pitted black olives Feta cheese, crumbled For the dressing: Whisk oil, lemon juice, garlic, vinegar, oregano, dill weed until blended. Season to taste with salt and black pepper (Can be prepared three hours ahead. Let stand at room temperature before serving.) Rewhisk before using.
