Kitchen Inspections Sept. 30 - Oct. 6

The following are among the food service establishments inspected from Sept. 30-Oct. 7 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Score: 87, Grade: B

Half gallons of buttermilk observed out on prep table, measured temperatures of 60 degrees with no time control.


El Ranchito Mexican Restaurant

1830 Atlanta Road, Gainesville

Score: 65, Grade: U

Person in charge not performing duties to ensure active managerial control, no demonstration of knowledge according to the duties being performed including: proper cooling methods and proper reheating/hot holding practices. No record keeping or cooling logs were observed. A small deep pan of chorizo was observed cooling on the countertop, covered by a melted ice pack. Many containers of ready-to-eat foods that were prepared in-house had no date label or a date label that does not match day of preparation according to inspectors food prep discussions with cook staff. Thermometer being used by cook to begin recording cooling temperatures was more than 40 F off calibration.

No sanitizer registering on test strips in standing water on utensils at air dry drain board. Food residue to sight and/or touch on mixing bowl and blades of knives. Slime debris along baffle, walls and interior components of ice machine. Quat test strips are water damaged and cannot measure concentration of sanitizer in wiping buckets and third bay of compartment sink.

Thick layers of frost or ice crystals accumulated onto some foods stored in walk-in freezer. Observed food employee assembling fajitas on grill wearing a wristwatch. Observed an employee preparing foods with no hair restraint.

China Wok

1015 Jesse Jewell Parkway, Gainesville

Score: 77, Grade: C

Open top of two-door sandwich unit observed with large pan of raw chicken wings being next to pre-cooked pork egg rolls. Neither of the sandwich units holding potentially hazardous food items at required 41 degrees or below. Sesame chicken, fried tilapia, rice were not being held at required hot holding of 135 F or above

Score: 90, Grade: A

Foods in make line cooler holding temperatures of between 42-48 F. Accumulated food debris and reside observed on non-food contact portions of equipment and utensils (interiors and handle areas of coolers, bases of blender and food processor, and exteriors of bulk food containers).

Score: 90, Grade: A

Dumpster area observed with a large amount of spilled grease that has begun seeping down incline to dumpsters and into parking lot.
