Kitchen Inspections: Sept. 19-25

The following are among the food service establishments inspected from Sept. 19-Sept. 25 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Score: 86, Grade: B
Cups, cans, snacks and tobacco products stored in prep areas. Shepherd’s pie and pot pie placed in cooler over 12 hours had temperatures of 47 and 46 degrees. Cooling items need to reach 70 degrees from 135 degrees within two hours and then reach 41 degrees within the next four hours. Out of temperature items were in deeper pans; same items in shallower pans had properly cooled. Receptacles were soiled with grease and food debris. Concrete surrounding receptacles had grease build up.

Need test strips for chlorine sanitizing dish machine to verify that machine is dispensing sanitizer at proper concentration. Dumpster area with bags of trash, empty boxes, and grease accumulation around drain.

Items (sliced tomatoes, turkey and chicken salad) on cold bar were being held at temperatures between 57 and 60 degrees. Tomatoes in one-door low boy in the expo station were 44. Potentially hazardous items must be held at 41 degrees or below. Chili cooling in cooler for 2.5 hours had not reached 70 degrees within the required two hours (was 84 degrees). Phones and keys in prep areas in kitchen. Personal items need to be kept out of food prep areas to prevent contamination.

Raw hamburger meat stored over ready-to-eat items in the homestyle refrigerator. Raw chicken and raw steak next to cheese in the four-drawer cold holding unit under the grill. Drawer below also had raw beef and ready-to-eat items. Ice machine with mold, mildew buildup. Four-drawer cold holding unit under the grill not keeping food at 41 F or less (tomatoes 54 F; shredded cheese 49 F and 46 F; raw beef 46 F). Ice bath holding refried beans also not keeping food at 41 F. Ice did not reach food in the containers. Homestyle refrigerator not holding temperatures of items located on door (ham 46 F; cheese 46 F). Steam unit not holding proper temperature for hot holding (rice 68 F; tongue 69 F). Inspection not posted. Gloves not being taken off after employees leave the prep area and then returning.
