Kitchen Inspections: Sept. 12-18

The following are among the food service establishments inspected from Sept. 12-18 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.
A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Burger King No. 3800
806 Athens St., Gainesville
Score: 91, Grade: A
Wrapped hamburgers being hot-held under heat lamps on the front line temped from 117-127 degrees. Food being hot-held must be at 135 degrees or over. Burgers were cooked to over 155 and held in PHM at 160 and 154 degrees, but when moved to heat lamp for service, they dropped below 135 degrees.

Hong Kong King Buffet

Hand-washing sink in dish area was filled with soiled dishes and was inaccessible for employees to wash their hands. Ice machine near drink station had mold, mildew (black). Large cooler was not holding at proper temperature (wings at 50 F; cooked chicken at 53 F; ambient air at 67 F). Sanitizing solution was above the required level for sanitizing solution. Levels above 200 ppm can be toxic. A food temperature measuring device could not be located. Two-compartment sink being used to prep meat and vegetables. Dumper does not have drain plug in place, allowing liquids to leak out. Wall with electrical boxes has not been maintained in good repair. Insects (roaches) observed in kitchen, in dishwasher, holes in table and behind wooden hook board.

No soap at hand sink in second room of kitchen. Raw chicken in large bowls in walk-in cooler left uncovered. Large bins of cooling rice with lids in walk-in cooler. Condensation from vent in walk-in cooler leaking into uncovered bowls of food. Wiping cloth bucket with only detergent and no sanitizer. In-use utensils stored in container of room temperature water with food debris in between uses.

Cigarette butts in dry goods storage area upstairs and on the stairs. Two-door cooler next to prep line was not holding foods at the proper temperature of 41 degrees or lower. Boxes of food stored on floor of walk-in freezer. Soiled mops left wet on floor next to service sink. Floor near three-compartment sink with hole that needs repair. Ceiling tile missing next to three-compartment sink, and hole in wall near stairs leading to dry goods storage. Personal items (mouthwash, dietary supplement) stored with customer food and single-use items at wait station.

Lights and bulbs throughout kitchen with no shields. Back door to kitchen open and many flies in kitchen.

Mold/mildew on baffle on two ice machines in kitchen. Inside of chemical sanitizing dish machine with buildup of food debris and residue. Chlorine sanitizer from chemical sanitizing dish machine not registering proper concentration on cleaned and sanitized dishes, but when test strip applied directly to container of sanitizer, there was no concentration registered. Reach-in cooler next to grill not holding foods at 41 degrees or below. Sliced tomatoes (45), diced tomatoes (46), ham (44), sliced cheese (45).
