Kitchen Inspections: Nov. 24-30

The following are among the food service establishments inspected Nov. 24 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Score: 96, Grade: A

Top of pizza oven with heavy buildup of dirt and debris. Clean nonfood contact surfaces at a frequency to prevent accumulations of soils. Repeat violation. Wall behind three-compartment sink with mold and mildew. Tiles under three-compartment sink missing and cracked. Physical facilities must be maintained and kept in good repair and cleaned as often as necessary to prevent accumulations. Prep sink coming off of wall. All fixed equipment needs to be sealed to the wall for easier cleaning.

Raw shell eggs were stored on top of the cooler out of temperature control. Temperatures of the eggs ranged from 62-67 F. Potentially hazardous foods must be held at 41 F or lower to prevent bacterial growth. Several wiping cloths were stored on countertops and prep tables. Wiping cloths must be stored in sanitizing solution to ensure food contact surfaces are being sanitized.

Employee at dish station loaded soiled tableware into warewashing machine, rinsed hands in three-compartment sink, then unloaded clean tableware. Hands must be washed with soap and water at a hand sink between handling soiled dishes and putting away clean tableware to prevent contaminating of the clean dishes. Turkey in two-door prep cooler was 70 F. Per the manager, the product had been thawing previously (all other items in the unit were less than 41 F. Frozen products were found thawing on a shelf in the dry storage room. Food products must be thawed under refrigeration, under running water cooler than 70 F, or by a method that prevents the food product from reaching temperatures higher than 41 F.

Handwashing sink in kitchen with no paper towels and blocked by rolling table. Each sink shall be provided with a way for employees to dry hands. Right lid missing off of dumpster and buildup of trash behind dumpster. Dumpsters must have tight-fitting lids and be free of debris to prevent rodents.

No paper towels at both front hand sinks. Ensure all hand sinks are provided with drying provisions to prevent employees from drying clean hands on unclean cloths, aprons, etc. Raw ground beef was stored above hot dogs. Raw bacon stored above cooked ribs and deli meat. Raw meat products must always be stored below pre-cooked or ready-to-eat foods. Fryers (underneath) had heavy buildup of grease and food debris. Dish trays had accumulations of residue. Clean all nonfood contact surfaces frequently enough to prevent buildup. Employee backpack and carton of cigarettes were stored on side table near fryers. Employees must store personal belongings in designated areas to prevent the contamination of food and food contact surfaces.

Score: 98, Grade: A

Scoop was in container of tuna with handle in the product. Scoop handle should remain above food surface to prevent contamination. Gaskets in the coolers need to be cleaned. They had buildup of food debris. Clean frequently enough to prevent buildup. Condensate leak in walk-in freezer under the evaporator unit, leaving ice buildup. Equipment should be in good repair and properly maintained.

Several plastic and metal small slicers had blades that were chipped. Two rubber spatulas and three cutting boards had chipped plastic. Keep all utensils and equipment in good repair to prevent plastic or metal shards from becoming physical contaminants.

Raw beef stored over crab ragoon filling and cheese in walk-in cooler. Raw animal foods must be stored according to minimum internal cook temperature and below ready-to-eat foods. Baffle of ice machine with heavy accumulation of mold. All food contact surfaces must be cleaned at a frequency to prevent accumulation. Wiping cloths stored on prep surfaces and make-line. Cloths in use for wiping counters must be held between use in sanitizer. Tongs used at grill stored hanging on handles of ovens touching dirty oven doors. The storage of in-use utensils should be on a clean surface of cooking equipment that has been sanitized. Floor under grill and fryers with heavy buildup of grease and food debris. Physical facilities must be cleaned at a frequency to prevent accumulations.
