Kitchen Inspections: Nov. 20-23

The following are among the food service establishments inspected Nov. 20-23 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Potentially hazardous food items to be cooled after cooking must be cooled from 135 F to 70 F within two hours and from 135 F to 41 F within a total of six hours.

Ceiling tiles near walk-in cooler with heavy damage. Replace damaged tiles.

Boxes of french fries stored on floor of walk-in freezer. All food shall be stored at least 6 inches above the floor. Managers prepping food without hair restraints. Employees preparing or handling food must use proper restraints to restrain loose hair. Wiping cloths stored on prep areas and counters throughout kitchen. All wiping cloths used to clean food contact surfaces need to be kept in sanitizer between use. No handwashing signs displayed in both male and female restrooms. A sign or poster that notifies food employees to wash their hands shall be provided at all handwashing sinks.

On the inside of the ice machine, walls of bin and around chute showed heavy buildup of mold. The ice machine needs to be put on a more frequent cleaning schedule to insure buildup is prevented. Air cooler in the butler’s pantry not holding potentially hazardous food items on display for service at required cold holding temperature of 41 F or below. These items ranged in temperature from 47-48 F.

Diffusers on soda machine had accumulations of mold. Clean diffusers and nozzles as often as necessary to keep them clean. Tile was cracked near drain of mop sink, causing water to pool. Repair/replace tile to prevent pooled water, which is an attractant to pests.

Foods stored uncovered in coolers, walk-in cooler and freezer. All foods must be stored covered in storage. Slicer, knives, peelers stored with food residue. All items must be cleaned and sanitized after use. No dates on any potentially hazardous prepared ready-to-eat foods. Foods must be labeled with a seven-day expiration date if held longer than 24 hours. Onions washed ready for use being dried on top of cardboard boxes. Do not use cardboard since it can not be cleaned and sanitized. Ladels, scoops stored in standing water. Only store in clean, dry container. Boxes from raw chicken (boxes to be thrown away) stored on top of clean utensils. Throw boxes away and do not allow to come into contact with clean utensils. Rewash utensils.

Employee reached bare hand in the ice machine at the front drink station and pulled out a piece of ice to eat. Bare hand contact with ready-to-eat food must be prevented. Manager will retrain staff. Plates beside salad cooler at cook line had buildup of food and residue. All food contact surfaces must be clean to sight and touch. Reseal hand sinks that have come unsealed from the wall to prevent the entrapment of water and food debris. Two-door cooler in server station has a leak and water was pooled in the bottom of the unit. Repair unit to prevent nonpotable water from coming into contact with the food product. Coving is chipped and missing beside the ice machine in the backroom and under the hand sink and beside the warewashing machine. Replace coving, repair/reseal where necessary to prevent mold and disrepair of the facility.

May need to look into increasing water temperature or adding another water heater. Spray bottle of orange cleaner stored on shelf below prep table with food items on same shelf. After cleaners are used, they must be stored away from food and food contact surfaces.

Inspection currently displayed is from Aug. 5, 2014. The most recent inspection report must be displayed. Gaskets and insides of equipment (coolers-lowboy, four-door cooler unit) had accumulations of food debris. Clean areas frequently enough to prevent buildup. Lowboy has leak in it. Equipment must be maintained. Have repaired and do not store food under leak to prevent contamination.
