Kitchen inspections, May 12-20

The following are among the food service establishments inspected from May 12-20 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: "A" (90-100), "B" (80-89), "C" (70-79), "U" 69 and below. Inspections (frequency of) a food service establishment will be conducted based on risk categorization. The risk type shall be determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a food service permit for a change of ownership, the establishment must score a 95 (A) or above with all Foodborne Illness Risk factors and Public Health Interventions in compliance. Permits must be posted in public view at all times. Food service establishments with drive-through windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Cups without lids and straws, and one cup stored on top of trays used to serve lunch. Cloths stored in sanitizer with levels low. Ice scoops on top of ice machine. Tennis shoes stored on top of uncovered single service cups; cups were thrown away and shoes moved. Ceiling tiles with dust, coved baseboard tiles and floor tiles broken, water pooled on floors, paint peeling on walls underneath prep sink. Shoes and handbags in prep areas and storage areas.

Bucket of sanitizer solution without detectable amount of sanitizer, water dirty. No chlorine sanitizer test strips available to monitor strength of sanitizer in cloth storage buckets used to wipe food contact surfaces or three compartment sink sanitizer compartment used to sanitize utensils and kitchenware. Food handler adjusting hat with gloves on during prep work (ready-to-eat foods) and not changing gloves. Prep sink without hot water. Dumpster area with accumulation of trash in enclosure and grease container with spilled grease on top.

Blenders have food and grime buildup along interior lid, gasket and detachable pieces. Spoon stored in standing water. Old equipment stored on floor. Boxes of cups and lids on floor. Styrofoam and tape under freezer chest is peeling apart and holding moisture.

Wiping cloth left on cutting board to wipe knives and sometimes laid with part of cloth in containers where food is stored on open sandwich board. Celery for salads being washed in "mild" chlorine solution. Floors, walls and ceilings throughout kitchen and storage need repair. Ceiling tiles torn in dry storage, floor peeling and walls peeling in dry storage off dishroom. Fluorescent lights in front glass cooler are not properly shielded and/or shatterproof to protect food in storage from any possible contamination. Walk-in cooler evaporator leaking from drip pan into pickle bucket. Backsplash needs to be sealed behind tea dispensing area.

Thermometer available for use in cook area; stem thermometer not properly calibrated for use. Dish washer not changing gloves between handling soiled kitchenware, utensils. Most drawers in kitchen need a thorough cleaning. Employee restroom (unisex restroom) needs a covered trash container. Food handler talking on phone while prepping food.

Food handlers making sandwiches at cook line without wearing gloves. Meat thawing in vegetable prep sink and in one compartment of vegetable prep sink; Ziploc package of chicken submerged under water. Many wiping cloths dry on prep surfaces being used for wiping prep surfaces but not stored in sanitizer between uses. Food handler rinsing off gloves and going back to making sandwiches. Many personal items stored in food prep/storage areas; radio, phone on prep table with slicer and jackets and phones stored on top of ice cream freezer. Raw hamburger patterns stored on tray for thawing with meatloaf (cooked and thawing also). Quat test strips have gotten wet (damaged) no longer accurate for testing sanitizer level. Walk-in cooler evaporator has condensate dripping from drain onto box of wrapped lettuce heads.
