Kitchen Inspections June 8-12

The following are among the food service establishments inspected from June 8-14 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. El Ranchito Mexican Restaurant

1830 Atlanta Highway, Gainesville

Score: 83, Grade: B

PIC not performing the duties of active managerial control to ensure staff are storing raw animal foods separately and /below ready-to-eat foods. Several days of record logs for cooling and reheating foods are missing or incomplete. In reach-in cooler, raw fish stored beside cooked seafood soup and above/beside salsas and sauces; raw chicken stored beside containers of chopped lettuce, sliced bell peppers and cubed steak.

Kentucky Fried Chicken No. 18

3711 Mundy Mill Road, Oakwood

Score: 96, Grade: A

Chemical sanitizer buckets using quaternary ammonium found to contain less than 100 PPM concentration. Quat was dispensing from the 3-comp sink at only 100 PPM max. Per manufacturer’s recommendation, quat must be in the 150-400 PPM range to maintain its effectiveness.

Score: 93, Grade: A

Chemical referred to by CFSM to be used in the event of a contamination event not an effective disinfectant against Norovirus. Need to obtain a disinfectant deemed effective by the EPA against Norovirus for use within establishment. Covered lexan container holding bulk supply of chopped tomatoes, found inside of make line cooler, not effective to cool within the requirements.

Plates and bowls stacked face up on clean utensil shelf in main kitchen. Clean equipment and utensils must be stored covered or inverted to prevent contamination from dust, splatter and insects. No test strips supplied for quat dispenser used at dish washing station and for bar three-compartment sink.

Hands not washed before gloves were put on to work with food. Buns for sandwiches being taken out of microwave with bare hands. Three bags of doughnuts sitting in basin of hand sink at start of inspection. In-use utensils (ice cream scoops) being stored in a container with accumulation of mold inside. Two-compartment sink and dish tub used as third compartment for the manual washing of kitchenware, tableware and utensils with accumulation of grease and debris in and around sink.

Score: 73, Grade: C

Raw hamburger stored on top shelf of walk in cooler. Ready to eat barbecue, hot dogs, and corndogs stored below and also comingled with other raw hamburger. Vegetable dicer stored with clean utensils found with food debris still in blade network. Black slime the length of baffle found on the opposite side of baffle from opening. Trays compartments storing clean utensils found with grime and old residues contacting the food-lip portion of the utensils. Temperature of corn dogs and chicken tenders under right heat lamp in main kitchen found at 117 F and 129 F; time and temperature control for safety foods must be hot held at 135 F or above. Large 50-gallon plastic tubs containing raw chicken and marinade prepped that morning ranging from 48-53 F after four hours cooling; time and temperature control for safety foods must be cooled from room temperature to 41 F or below within four hours.

No documentation could be furnished to demonstrate a CFSM on staff. No hot water available at hand washing sinks in men’s or women’s restroom. Top and side of under the counter grease interceptor at three-compartment sink has accumulated grease-like buildup. Sinks and toilets in both restrooms dirty, plumbing fixtures must be kept clean and maintained.

Score: 98, Grade: A

Test strips could not be provided for testing quaternary ammonium concentration used in sanitizing wipes. Raw egg shells and other trash found littered in enclosure behind dumpster. Grease receptacle and ground surrounding receptacle coated with grease.

4906 Lanier Islands Parkway, Buford

Score: 87, Grade: B

Observed opened bag of wing sauce in dry storage with mouth of bag exposed and attracting pests. Accumulated grime and debris buildup inside customer self-service tea urn nozzles, ice chute and water dispenser. Pasta salad, buffalo dip and salad dressings stored in bottom cabinet of front make line cooler 49-50 F. Several containers of chopped leaf salad mix cooling in walk-in cooler fell from 57 F to 56 F or remained at 54 F after a 50-minute cooling time frame.
