Kitchen Inspections June 5-7

The following are among the food service establishments inspected from June 5-7 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Slicer had not been used to cut meat and had heavy accumulations of meat residue on blade and under blade. Approximately 2 inches of standing water in the dumpster area. Clean the refuse area drain to prevent pooling water, which acts as an attractant for flies and rodents. Mop sink is still in disrepair. Multiple flies were observed throughout the facility.

Chemical sanitizing ware washing machine not dispensing sanitizer. Ice machine had heavy residue of mold buildup.

Observed employee drinking from coffee mug at food prep station while slicing onions. Stack of empty buckets blocking access to hand sink beside three-compartment sink. Sanitizer bleach bucket very cloudy and not registering any chlorine on test strips. Cooked shrimp, cream cheese and egg rolls in walk in cooler found at 46-47 F. Time and temperature control for safety foods must be cold held at temperatures of 41 F or below.

Debris and residue buildup along sides and bottom of orange slatted salad spinner and white salad mixing container. Slime debris buildup in chute of ice dispenser at customer self-service counter. Caulking along seams of hood vent above fryers coming loose and hanging above food preparation equipment. Caulking along four-compartment sink missing, damaged or stained with debris and residues. Observed employee hat stored on clean utensil rack above four-compartment sink and employee cell phone on prep counter at make line cooler.

Interior components of ice machine behind baffle contained a buildup of black and pick slime mold. Food thermometers found in cheese and sausage of make line cooler both off from the intended temperature. No testing kit available for chlorine sanitizer used in chemical sanitizing dish machine. Dough proofing equipment with buildup of food debris and receipt paper trash inside of units. Dumpster lid torn off of outside dumpster and propped up on gate inside of enclosure. Floors under shelving in walk-in cooler with heavy buildup of trash and food debris. Walls behind prep table next to pizza oven, and dish machine with heavy buildup of grease and food residue.
