Kitchen Inspections: June 4-9

The following are among the food service establishments inspected from June 4-9 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. McDonald’s Restaurant No. 27164

Score: 96, Grade: A
Many employees were wearing watches, bracelets and rings. The only jewelry food handlers may wear is a plain band such as a wedding band. Cardboard dumpster found without drain plug. All refuse and recycle dumpsters must have a drain plug in place to prevent entrance of pests.

No detectable amount of sanitizer in cloth storage buckets; cloths must be stored in solution with correct sanitizer amounts.

Current Certified Food Safety Manager expired 1-11-15; a CFSM must be obtained as soon as possible and the certification displayed. Dish racks holding dishes with large accumulation of food residue on racks and inside dishwasher with food residue accumulation; clean and sanitize areas so that clean dishes will not become contaminated. Single-service napkins underneath self-serve Coke area soaked with tea and Coke, and leaking down onto packages; have leak repaired and do not store items underneath this leak. Cabinets underneath self service area found with mold and mildew due to leaks; have leaks repaired and clean insides of cabinet. Leak inside standup freezer needs to be repaired.

Food handler was handling bread and spices used on burgers and fries with their bare hands. Food employees must not handle ready-to-eat foods with their bare hands and shall use suitable utensils such as deli tissue, spatulas, tongs, dispensing utensils or single-use gloves. Wiping cloths were kept in pocket or on counters in the kitchen. Wiping cloths must be stored in chemical sanitizing solution at a concentration specified by the manufacturer. Employee washed single-use gloves. Gloves shall only be used for one task and discarded when damaged or soiled. Floor and wall underneath dish machine, and corners under shelving in walk-in cooler, in need of better cleaning; clean these areas often enough to keep them clean.

Container of waffle batter and two containers of chocolate chips in the two-door reach-in cooler were stored uncovered. Food must be stored covered to prevent contamination. Walk-in freezer had heavy ice accumulations below the fan; this is considered nonpotable water and must be repaired to prevent contamination of food items. Several plastic pans and containers stored on the shelf across from the three-compartment sink were cracked and broken. All items used in food service must be maintained in a state of repair to prevent hazards and remain easily cleanable. Stainless still milkshake containers had sticker residue on their exterior surface. Nonfood contact surfaces must be clean to sight and touch.

Items in walk-in cooler without seven-day label. All potentially hazardous ready-to-eat items must be labeled with a seven-day discard, with the Day 1 being the day the item was opened. Dip wells in main kitchen need detailed cleaning. Ice machine in cafe had a small amount of black residue on the side of the baffle. Cornelius ice dispensing unit in the main kitchen had black residue near the dispensing area. Microwaves in the cafe and medical kitchen had buildup of food debris. Unclean frying pan with egg residue was stored in a cabinet with clean dishes and utensils in the main kitchen. All food contact surfaces must be clean to sight and touch. In the cafe kitchen, a container with no handle was used to scoop ice and was stored in the ice dispenser. Scoops must have handles and be stored in a manner that prevents the hand contact surface of the scoop from coming in contact with the food product. Single service cups in the cafe kitchen were stacked beside beverage dispenser with no protection of the lip surface. Leave cups in plastic sleeve to prevent contamination. Plates at buffet areas in cafe and main kitchen are stored with eating surface facing up. Invert all tableware to protect food contact surface from contamination.

Two-door stand up cooler with internal temperature of 55 F; repair person contacted to repair coolers.

Water pressure gauge to measure final rinse pressure for hot water sanitizing dish machine is not working. Must have pressure gauge in working order so that required final rinse pressure of 15-25 PSI can be verified for hot water sanitizing; hot water covers dish or utensil surfaces for effective sanitizing. Hand-washing sink on serving line for grill employees and sandwich employees to use is not supplied with the required 100 F water for hand washing; water only reaching 73 F.
