Kitchen Inspections: June 22-30

The following are among the food service establishments inspected from June 22-July 2 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.


A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Score: 96, Grade: A
No thermometer provided in reach-in refrigerator. All units that hold potentially hazardous foods must be supplied with a temperature measuring device. Coving was missing in dry storage room. Two holes were found in ceiling in front of the three-compartment sink. Maintain physical facilities in a state of repair. Some debris found under equipment in kitchen and under shelving in dry storage area. Food debris will attract pests and rodents; clean frequently enough to prevent accumulations.

Reach-in freezer had heavy buildup of ice and mold on bottom shelf. This must be defrosted as the ice is from a non-potable water source and must not be in contact with foods. Maintain all equipment in good repair and proper adjustment. Refuse area was littered with trash. Keep area clean to prevent the attraction of pests and rodents. There is a hole in the ceiling of the dry storage room. Patch and cover as necessary to prevent the entry of pests. Vent hood at the front fry station has heavy grease buildup and some condensate on walls. If this system is not sufficient to prevent grease and condensation buildup, fry foods under the larger vent hood in the back room.

Floor tiles were missing grout, and floors tiles were missing in small area in the dish room. Keep all floors and walls clean and replace missing grout and floor tiles.
