Kitchen Inspections: June 21-26

The following are among the food service establishments inspected from June 21-26 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Score: 92, Grade: A

No Certified Food Safety Manager on staff. Food handler with beard longer than the half-inch allowance. Containers of shrimp being thawed under running water in vegetable preparation sink. Two-door lowboy missing part of left door gasket and right door needs help keeping shut. Grease extractors (vents) and lower lip of hood with heavy buildup of grease, dust and accumulation forming drips on lower lip of hood from large amount of frying taking place.

Employee in back prep area handling ready to eat tortillas with bare hands. Tea urn nozzle with a heavy buildup of mildew and mold after disassembly. Menu board behind counter does not have reminder for foods offered undercooked. Three-door glass cooler in front food service area, and sandwich unit in front of grill not holding TCS foods at required 41 F or below. No temperature measuring device located in three-door glass cooler, and sandwich unit in front of cooler (both units not reaching proper cold holding temperatures).

Ice machine has a very heavy buildup of slime and mold along interior walls and ice chute portion of machine. Inspection report displayed with a score of 96. Most recent inspection score was a 67.

Bread loaves stored under soup well at drive through area were extended past the side/front of the shelf and exposed to contamination from employees legs, shoes while prepping soups.

Observed food employee place tomatoes and an onion in bottom of vegetable sink with accumulated debris and grime along corners and seams of basin and sink had not been sanitized prior to use. Employee brought in delivery of foods and delivery bags were placed on cutting board designated for chopping ready-to-eat foods. No ready-to-eat foods prepared in-house have date labels, many foods prepared earlier in the week per CFSM. CFSM had coolers serviced June 21; service company adjusted thermostats in coolers per CFSM, thermostat observed at below (warmer) than normal setting in reach-in cooler.

Employee drinks in disposable cups with lids and straws as required but stored on shelf above prep sink and drainboard. Chemical sanitizing dishmachine not dispensing any sanitizer at time of inspection. Three-compartment sink set-up an in-use without a required rinse between the washing of kitchenware, equipment, utensils and the sanitizing of these items. Grass around dumpster area with accumulation of grease.

All spray bottles of sanitizer used to clean dining tables and food contact surfaces registering 0-50 ppm quat on test strips; sanitizer must maintain a concentration according to manufacturer requirements (150-400 ppm). No test kit available in to check concentration of Purell ethyl alcohol sanitizer used for cleaning dining tables and food contact surfaces.
