Score: 86, Grade: B

Can opener, breadstick pans, personal pizza pans, drain board for clean dishes at dishwasher all with food debris accumulation. Soda dispenser with mold/mildew buildup on nozzles and diffusers. Dishwasher not dispensing chemical sanitizer to sanitize kitchenware/utensils stored in silverware trays with food debris. Wire racks for kitchenware storage and rolling proofer racks with buildup of grease and food debris on them. Cabinets under soda dispensing station have an accumulation of syrup spills. No quaternary ammonium test strips available to monitor the strength of sanitizer being dispensed at three-compartment sink. Women’s restroom without required covered trash container for sanitary napkins. Hood in wing area with dripping grease. Ceiling vent over kitchenware storage area with dust accumulation. Ceiling damaged over pizza buffet area. Floors need a better cleaning behind equipment — dishwasher, shelving, coolers and especially at floor/wall juncture there is an accumulation of food/grease. Baseboard needs replacing on wall behind storage in back. Door sweep damaged at back door and door itself does not fit tightly in frame.

Food splatter and heavy dust accumulation on ceiling tiles in kitchen. Vent missing in ceiling. Floors and walls need cleaning underneath cook area and walk-in freezer and throughout kitchen.

Containers used to hold soft serve not properly washed, rinsed and sanitized before storing. Container has a white liquid puddle at bottom with a sour smell. White gravy held at 96 degrees. Walk-in cooler and sandwich make-line cooler are not holding ambient temperatures below 41 degrees. Sanitizer solutions for buckets are not reaching required levels of sanitizer on test strips. Bucket with sanitizer solution has visible food debris and grease layer. Spoons and scoops used for dessert toppings, malts, etc. must have handle end stored out of the food. Plastic spoons at drive-through window should be stored handles up. Single services items must be store a minimum of 6 inches off the ground. Racks and bottoms of coolers need better and more frequent cleaning. Dried food buildup on insides of coolers. Floors along floor/wall juncture and under shelves in walk-in cooler need better and more frequent cleaning. Condenser vent in walk-in cooler accumulating a thick layer of dust and dust is beginning to collect along ceiling around the condenser vent.
