The following are among the food service establishments inspected from Jan. 30-Feb. 3 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. 3050 Big Creek Road, Buford

Score: 81, Grade: B

Accumulation of mold in rear ice machine behind baffle and on surfaces. Bar low temperature dish machine was found to not be dispensing sanitizer. A container of crab meat, a container of house made sauce and an open container of cottage cheese were all found being held past their discard date. Female rest room found without a covered receptacle.

Score: 83, Grade: B

Foods found in the walk-in cooler were found to be over 41 degrees: Beef at 45 degrees, black beans at 48, cooked beef at 45 and raw chicken at 48. A grease container was found with heavy buildup of grease on and underneath container.

There has not been a Certified Food Safety Manager on staff since this food service establishment was opened a year and half ago. A cook was observed cutting up cilantro as condiment on meals with bare hands. No hand soap or paper towels was available at the hand sink during the inspection.

Large bags of flour and sugar were found stored with top open to possible overhead contamination. Several food items were found at unsafe food temperatures: a cut tomato on counter top was at 57 degrees, three containers of refried beans were at 57, a container of chicken was at 54, a container of beef was at 55, shell eggs were found at 63 and horchada was at 48.

The temperature of a pork butt left out on counter for pulling was found at 108 degrees after 30 minutes. Cheese and shell eggs at temperatures of 43 and 44 in ice bath stored in pans not surrounded by enough ice to keep the temperature of foods at 41 degrees or below.

Three pans of beef cooked the previous day was found stored in the reach in cooler without lids. The dumpster area found to have large accumulation of debris beneath and around dumpster.

Accumulation of grime debris was found in the dispenser nozzles and the ice chute at the soda fountain.
