Kitchen Inspections: Jan. 12-16

The following are among the food service establishments inspected from Jan. 12-22 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Top of grease container in parking lot found with accumulation of grease. Ceiling is leaking by three-compartment sink. Mop sitting in mop sink to dry; hang mop to allow mop to dry so it does not contaminate other areas and so it dries properly.

No paper towels available at hand sink in employee’s restroom downstairs. No food temperature measuring device (thermometer) to monitor the temperature of cooked, reheated and hot and cold held foods. End of buffet with steam table is not properly protected from possible customer contamination; sneeze shield is not high enough to protect food displayed on steam table. Walk-in freezer evaporator has been leaking condensate; floor with large buildup of ice. Freezer door does not appear to shut tight correctly. Hot water not required temperature at three-compartment sink for the washing of kitchenware, utensils. Employee restroom door was missing a self-closer/self-closing mechanism. Outside grease container must be stored on a concrete or asphalt pad to allow for easy cleanup of spills. Several ceiling panels damaged in kitchen over three-compartment sink/prep area, bottom of stairwell (food carried upstairs) and in dry storage area. Epoxy painted floor with paint worn off in several places and buildup of grease and debris that will need to be scrubbed off to maintain floor in clean condition. Back screen door in use with gap under door large enough to allow for possible insect or rodent entry and door itself needs to be sealed tighter in frame also to prevent possible insect, rodent entry.

Metal racks above three-compartment sink for storing cleaned and sanitized dishes and metal racks in walk-in cooler with food debris and missing paint in spots; must clean racks more frequently.

Chemical spray bottle found on steam-table, prep-table in back of kitchen while food was being prepped and on shelf with glove boxes at grill. Two-door sandwich unit in cook area appears to have a condensate leak inside that has allowed water to accumulate inside. Alfredo should be either broken down into smaller quantities or use ice wand to help accomplish cooling within required parameters.
