Kitchen inspections for Sept. 29-Oct. 5

The following are among the food service establishments inspected from Sept. 29-Oct. 5 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: "A" (90-100), "B" (80-89), "C" (70-79), "U" 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a food service permit for a change of ownership, the establishment must score a 95 (A) or above with all Foodborne Illness Risk factors and Public Health Interventions in compliance. Permits must be posted in public view at all times. Food service establishments with drive-through windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Mestizo Southwest Grill

Score: 91, Grade: A
Bottles of Gatorade on prep tables opened. Water filter, pipe leaking at ice machine with duct tape and plastic trying to fix. Replace broken light shield in kitchen - clean and replace damaged, stained ceiling tiles. All personal items (jackets, CDs, phones, etc.) must be on a separate shelf away from items used for customer.

No paper towels or soap at hand sink in back kitchen. Meatballs temped 90 F and 120 F and not required hot holding temperature of 135 F or above. Broccoli soup temped at 130 F and not held at 135 F or above. Hand sink in front area has an instant hot water heater installed but no hot water.

Hands not being washed between glove changes or changing tasks. One hand with glove but touching bread for sandwiches with other hand without glove. Coke machine nozzles and diffusers not being removed for cleaning and sanitizing enough to prevent mold build-up. Not enough sanitizer (chlorine) in sanitizer compartment of 3-compartment sink. Wiping cloths for food contact surfaces (prep areas) not stored in sanitizer between uses. Washing gloves on hands (hands being rinsed - with gloves on - in vegetable sink and in 3-compartment sink, hands being dipped with gloves on in wash water.

Floors throughout need detailed cleaning, especially behind, under equipment.

Food stored on shelving in big walk-in cooler that is not the required 6 feet off the floor. Elevate shelving. Plastic forks laying on top of onions, pickles, tomatoes out for self-service in coolers in dining room. Utensils need to be large (long) enough to not fall into food. Current inspection not posted where public can view from one inch away. Forks out for customer self-service laying in a large basket. Light shields over fluorescent bulbs in dry storage either missing or need end caps to seal bulb inside.

Wall mounted fan over prep table blowing into cook area needs to be cleaned - large accumulation of dust on grill of fan.
