Kitchen inspections for March 9-17

The following are among the food service establishments inspected from March 9-17 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: "A" (90-100), "B" (80-89), "C" (70-79), "U" 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a food service permit for a change of ownership, the establishment must score a 95 (A) or above with all Foodborne Illness Risk factors and Public Health Interventions in compliance. Permits must be posted in public view at all times. Food service establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Mold, mildew in ice maker; sundae cooler, moolatte and soft-serve machines need detailed cleaning on all food contact surfaces. Sundae cooler on a timer causing all foods to be held out of temperature. Serving spoons held in cups of room temperature water. Plastic spoons, condiments in containers with food debris. Lids, etc., stored on counter with water, coffee, etc. All hand sinks need to be sealed to wall. Shelves in kitchen need detailed cleaning, some items in greasy boxes. Grease container dripping in dumpster enclosure. Dumpster open. Floors (especially in walk-in freezer and under dry storage) need detailed cleaning. Cove molding in cabinet under drink dispenser and outside of walk in cooler need resealing to wall.

Grocery bag used to store meat and bones for glaze in stand-up freezer. Green beans and other vegetable stored in upright cooler by oven was below beef. Cheesecakes stored in unrefridgerated display case in dining area near salad bar. Food service permit was not displayed. Most current food service inspection was not posted and not within 15 feet of front door. Tongs being stored on front of oven door between uses. Coffee mugs stored on trays with food debris. Bowls beneath hot hold area for food had food debris inside. Plates below food prep table near grill had food splatters on the side. Large metal pans in dry storage were not inverted. No chlorine test strips available to monitor the strength of sanitizer being dispensed in dish machine.

Interior surfaces of icemaker have mold, mildew. Gasket on front salad cooler damaged - replace to provide a smooth, durable, and easily cleanable surface. Hood system dripping grease. Dumpster open. Grease container dripping in enclosure. Floors have accumulations, especially under equipment. Cove tile outside of and inside walk-in cooler no longer attached - floor tiles and grout loose in several areas - 10-12 floor tiles missing, allowing water to accumulate.
