Kitchen Inspections for March 27-March 28

The following are among the food service establishments inspected from March 27-28 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.
A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Old walk-in cooler used as storage has floor threshold coming up, and steel wall panel corroding and falling apart near coving. Holes in walls in several areas in kitchen. Dust accumulating on ceiling vents, light shields, etc. Some areas in kitchen missing floor grout. Storage shelf in hall, near bag in box, has missing paint, and dry storage shelf is wearing off paint. Ceiling peeling near cook line and in kitchen prep area. Light shields in kitchen prep area missing end caps. Light cover at fryer area not approved cover.

Hand sink full, blocked with kitchenware. Cloths used to wipe food-contact surfaces being tucked into aprons of employees, and laying on counters and prep surfaces. Prep sink with kitchenware stored in both basins. Ladles, knives, rice scoop stored in standing water.

No thermometers in any cooler, in restaurant. No hats or hair restraints on some food handlers. Cloths tucked into back pockets. Clean kitchen utensils stored in prep sink. Top to chest freezer broken. Dust, food residue on shelves throughout entire kitchen; shelves that hold pizzas very dusty. Food, debris on outsides of bulk food containers; evaporator fans in walk-in cooler with heavy debris residue. Floors throughout entire kitchen especially at floor/wall juncture with food residue; floors in walk-in cooler with heavy buildup underneath shelves. Ceiling tiles near back prep area with food splatter. Light shields missing, broken throughout entire kitchen.
