Kitchen Inspections for March 11-14

The following are among the food service establishments inspected from March 11-14 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.
A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Hibachi Grill & Sushi Buffet/Yong Feng

Score: 78, Grade: C

Food employee had canned beverage open, and drink in disposable cup with no lid or straw, and above food prep table. Drill with mixer end kept in hand sink, and blocking hand sink. Paper towels not available at hand sinks in kitchen, or in wait station. Utensils, pans, prep tables, cutting boards, cups, can opener and grinder had food debris; ice machines had mold, mildew on chutes. Pork and beef being thawed in boxes; chicken thawing in sink filled with water. Thermometers for taking food temperatures during cooking or monitoring time as a public health control for sushi, not ready available to food employees. Container of cut and washed potatoes in kitchen, bowl of meat in walk-in cooler and pan of meat in walk-in cooler kept on floor during storage. Cloths for wiping food contact surfaces in kitchen, not stored in sanitizer solution, and sanitizer solution not made for back kitchen use. Broccoli not washed properly, and waiting to be cooked. Broccoli cut and not washed prior to cutting. Cups that were cleared at dishwasher were placed in rack stored on top of dirty water. Cups and pans stacked wet. Container of empty crab shells in walk-in freezer that have meat out of them. Food employees not changing gloves between different tasks, or when gloves ripped. Wood at meat prep sink, wooden tool with nails used to obtain cooked chicken, and drill used to connect a mixing utensil. Test strips not available for sanitizer. Drainboards at dishwashing area soiled with food debris. Outside of food containers, outside of bulk storage containers, around food prep equipment, under storage tables had food debris. Racks for utensils and pan storage had food residue/dust. Hand sink in employee restroom has drip when hot water is on, and hand sink at mop sink dripping below. Floors throughout kitchen have greasy residue and food behind equipment; walls have splattered food debris. Personal items (keys, phones, boots, food) intermingled with single-service items, kitchenware and utensils.

Boxes of single-serve items on floor, in dry storage. Most sinks no longer attached to walls. No covered trash cans in women’s restroom. Dumpster open. Walls in many areas need to be detailed more frequently to stay clean; many areas where metal flashing is no longer sealed.

Burger King No. 5920/Mundy Mill

Salad station cooler had power source disconnected when unit was moved slightly. Potentially hazardous food items stored inside were at 54 degrees, 61 degrees. Many Lexan containers stored on shelf, above prep sink were stacked wet after cleaning and sanitizing.

Score: 80, Grade: B

Hand sink in kitchen had no paper towels at beginning of inspection. Sanitizer at warewasher not working. All sinks no longer attached to walls. Warewasher has accumulations inside and out. Dust, grease on most kitchen equipment surfaces. No hot water at front hand sink, or in ladies’ room. Leaks at warewasher, women’s restroom hand sink. Walls throughout are peeling paint, cove molding missing from most of kitchen, walls and floors throughout need much better cleaning and some broken floor tiles in kitchen, men’s room, dry storage area. Noted rodent activity in dry storage areas.
