Kitchen inspections for June 3-10

The following are among the food service establishments inspected from June 3-10 by the Hall County Environmental Health Department.Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment. A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate.


When a restaurant changes ownership, a new food service permit must be issued. To be issued a food service permit for a change of ownership, the establishment must score a 95 (A) or above with all Foodborne Illness Risk factors and Public Health Interventions in compliance. Permits must be posted in public view at all times. Food service establishments with drive-through windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment.

CFSM was required on staff by Dec. 1, 2009. Hand sink blocked with pans, etc. Refrigerators with uncut vegetables both struggling to maintain required temperatures.
Thermometers missing, not visible in coolers. Inspection from June 11, 2007, posted. Gaskets on two-door cooler torn.

Walk-in cooler not maintaining food storage at 41 degrees F or below. Precooked rice and chicken wings in cooler several days not cooled to required 41 degrees or below. A 12-inch splash guard is needed on the left side of hand sink to protect rolling rack with breading for fryers from any possible contamination from hand washing since rack just fits between hand sink and fryers. More detailed cleaning needed in corners behind equipment and along floor/wall juncture behind equipment — accumulation of dirt/grease. Plexiglass light lens with large crack over dish washing area. Back door without self-closer, side bar with ineffective self-closer.

No certified food safety manager. Small chest freezer wedged in space between hand sink (in front of hand sink) and grill in main concession. Nacho cheese being reheated on steam table.
Hamburgers, cheeseburgers and corndogs being hold held in large heating cabinet at below required hot holding temperature of 135 degrees F. Required sampling report for well not given to Environmental Health Department as required. Neither main concession nor pit concession have most recent inspection posted in public view. Upper deck ladies restrooms without a single covered trash container. Wall behind hand sink in main concession and wall behind both 3-compartment in both kitchens deteriorating.
Floors needs better cleaning at floor/wall juncture behind cook line main concession. Set of lights over steam line and dish washing area (main concession) missing end caps to seat fluorescent lights in plastic sheaths.
Screen door at pit concession all broken up and does not shut. Both doors in main concession with either missing threshold (back door) or screen damaged and side door swollen and does not shut.

Shield protecting sink has mold, mildew. Floors under shelving and equipment need better cleaning. Hood system needs cleaning — dust and grease accumulation. Fly strip over vegetable prep sink — remove fly strip.

Score: 90, Grade: A
Jugs of bleach stored on shelf with canned goods in dry storage above all other dry storage. Restroom door still needs self-closer installed. Restroom doors must be tight-fitting and have a self-closer. Several places in kitchen where floor tiles are missing and bare, damaged wood flooring is exposed.
Dry storage room with painted floor where most of paint is worn off and bare concrete floor is exposed. Floors must be smooth, durable, and nonabsorbent.
Wood baseboard not sealed at floor/wall juncture behind cook line — grease, food accumulating in crack. FRP not sealed to wall beside cook line. Floors need a good cleaning throughout kitchen, dry storage under and behind equipment. Only one set of fluorescent lights in operation in kitchen.
 Area over 3-compartment sink and prep are too dark for proper cleaning of area, equipment, utensils and prepping food. Flies still numerous in establishment.
Vector machine installed with sticky pads overloaded with flies. Vector machine installed over freezer where ice is stored and scooped.
