Kitchen inspections for June 23-27

The following are among the food service establishments inspected from June 23-27 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: "A" (90-100), "B" (80-89), "C" (70-79), "U" 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a food service permit for a change of ownership, the establishment must score a 95 (A) or above with all Foodborne Illness Risk factors and Public Health Interventions in compliance. Permits must be posted in public view at all times. Food service establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Mold, mildew on inner ice maker surfaces. Scoops for pizza toppings stored with handles in toppings. Cabinets under wait area soda dispenser with leak from dispensing mechanism; inside of cabinets also warped from years of leaks, etc. Sinks all need to have caulk removed and then be resealed to walls to prevent water running behind. Surfaces of equipment have buildup of grease, food debris, etc. Cove throughout is no longer securely attached. Floor throughout needs better cleaning. Needs detailed cleaning; walls throughout have food splatters. Tile grout in warewasher area mostly missing. FRP in corner areas needs repair.

Shelving under prep table for storage of kitchenware on cook line is dirty, greasy. Hood vents dusty over cook line. Door gaskets of Victory freezer in cook area with mildew build-up. Rodent droppings on storage shelving. Floors, especially under, behind and at floor/wall juncture under equipment need a good cleaning throughout kitchen. Painted wall in service area, drink station with peeling paint and hole in wall through baseboard of cabinet. Wall and baseboard deteriorated in kitchen under stainless steel table next to vegetable prep sink. Ceiling in cook area dusty, greasy. Painted floor in service area of kitchen with peeling paint. Evidence of rodent activity on shelving in storage area and in service area of kitchen. Many dead and some live roaches in service area of kitchen. Concession trailer (in use at time of inspection) does not have screening for openings to prevent insect entry.

Accumulations on soda nozzles and dispensers. Pumps for coffee syrups are stored with a sticky substance. Gaskets on ice maker, double door cooler, and dorm cooler up front all damaged. Counter edges repaired with duct tape. Cutting boards need replacing. Warewasher has accumulations inside and out. Most equipment in kitchen and serving area needs detailed cleaning. Floors throughout, especially along floor/wall juncture have accumulations of food, trash, dead insects, etc. Cove molding throughout kitchen is no longer attached to wall at floor level. Tile in service area missing. Dead insects all over floors, etc.

Leak under four-compartment-sink. Cove tile and tile at employee restroom entrance no longer attached to floor and wall. Ceiling tile missing in entry area, vent cover missing. Ceiling tiles and vent covers in cook area have splatters, grease. Clean all ceiling area, replace missing tiles and vent covers. Floor needs much better cleaning especially in corners and along wall.

Food handler rinsing hands in hand sink and drying hands without applying soap for proper hand washing. Dishwasher handling soiled kitchenware and utensils (loading into dishwasher) and then removing clean kitchenware and utensils without washing hands in between. No temperature measuring device (thermometer) available to monitor hot and cold held foods, cook temperature of foods or reheating temperature of foods. Restroom vanities not sealed to floor. Condensate leaking into bottom of three-door cooler in dry storage room. Condensate leak inside prep cooler on cook line. Hand sink installed in dishwashing area without hot water. Wastewater from the washing down of deck and inside walk-in cooler greasy and stagnate and draining toward the lake below back enclosure of restaurant. No covered trash receptacle in women's restroom for the disposal of sanitary items. Women's restroom door without self-closer, men's restroom door self-closer not working properly. Bare wood baseboard in dry storage not painted or sealed to floor at floor/wall juncture. Flooring (tiles) damaged under hand sink installed in dishwashing area. Can lights above cook line not shielded and/or do not have shielded bulbs installed. Back door to kitchen without self-closer, door to dry storage in marina building without self-closer or door sweep to prevent insect, rodent entry. Side door to deck from restaurant with damaged door sweep. Screen on window at dishwasher not tight.
