Kitchen inspections for July 22-27

The following are among the food service establishments inspected from July 22-27 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: "A" (90-100), "B" (80-89), "C" (70-79), "U" 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a food service permit for a change of ownership, the establishment must score a 95 (A) or above with all Foodborne Illness Risk factors and Public Health Interventions in compliance. Permits must be posted in public view at all times. Food service establishments with drive-through windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. No Certified Food Safety Manager on staff. No paper towels available for dispensers in kitchen and restrooms. Electric can opener blade with buildup of food debris, prep tables sticky, oily. Prep sink and drainboard dirty, greasy. Pan of lasagna in pizza make line without date labeling. Spray bottle of unknown chemical on cutting board at vegetable sink. Wiping cloth on cutting board at prep sink moldy, dirty. Pizza make line cooler door gaskets cracks. Restroom sinks need to be sealed to wall. Drainboards on both sides of 3-compartment sink need to be sealed to wall. Cutting boards at prep sink heavily scarred. Brick hollowed out to hold dough press leg not sealed. Moldy silicone sealing inside sink compartments at 3-compartment sink. Both drainboards at 3-compartment sink with food debris, greasy. All shelving above prep areas, below prep areas with food debris, greasy and shelf below back prep table with dough press with rodent droppings. No backflow prevention device installed on mop sink faucet. Evidence of rodent activity in dough press, in pans underneath dough press and on prep table behind dough press as well as below prep table on shelving and items stored on shelving — boxes of gloves, etc.

No Certified Food Safety Manager on staff. Several knives, dough mixer, dough docker with dried food debris, sticky. Tea nozzles with some buildup of mold. Many of the kitchenware items recently cleaned and sanitized are stacked wet (lexan containers). Restroom sinks need to be sealed to wall at back of sink/wall juncture. Both drainboards at 3-compartment sink need to be sealed to wall. Resurface cutting boards that are heavily scarred and no longer easily cleanable. Pizza make line door gaskets cracked. Compartment sink basins sealed inside with silicone that has begun peeling and is moldy. Bulk food containers — salt, sugar, etc. — need better cleaning. Sticky, food debris on lids and sides. Microwave oven door with splatters on inside of door. Coved baseboard coming loose from wall in several places. Wall behind 3-compartment sink splattered with food debris.

Sushi out of temperature. Foods on hot bar out of temperature. Gaskets on double-door coolers heavily damaged. Gaskets on all coolers need detailed cleaning.
