Kitchen Inspections for July 17-23

The following are among the food service establishments inspected from July 17-23 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Multiple violations in upper categories that could lead to a foodborne illness if they weren’t corrected. Demonstration of food safety knowledge not being properly displayed by staff due to severity of violations. Training of staff is necessary and monitoring that proper food safety measures are taken throughout the flow of food. Food employee drink stored with utensils and over plates. Raw meat products not separated by minimum cooking temperatures in reach-in cooler near grill, and walk-in cooler. Sliced tomatoes, onions and peppers below grill uncovered. Chili relleno stored uncovered in walk-in cooler. Salsa stored uncovered in ice bath in kitchen. Tortilla shells uncovered on line. All items in reach-in cooler at grill area, not 41 degrees for cold holding (items temping at 45 degrees to 58 degrees). Beef filled tortillas taken from coolers and pork (carnitas) in oil left at room temperature (temping at 98 degrees and 76 degrees) by grill area, and not required cold holding temperature of 41 degrees or less. Flies throughout kitchen in prep areas. Sticky pad needs to be replaced at vector control device. Fly fan at back door needs to be adjusted to make sure adequate amount of air blows them out of building.

Certified food safety managers certificates expired February 2013 and posted by inspection. Mold, mildew on ice machine baffle. Pans stacked wet on dry storage rack. Single-service items in dry storage building are on floor and not kept 6 inches off floor. Food employee touched hat with gloves and then, wiped food prep table. Door of ice machine broken and falls off. Walk-in freezer has condensate dripping and freezing. Floor tiles missing inside walk-in freezer. Walls in dry storage with canned foods is bare sheet rock. Hand sink on wall in kitchen missing tiles, and sink pushed away from wall. Walls throughout kitchen need holes filled, tiles regrouted or replaced, if missing, and any peeling paint touched up with epoxy paint. Light shields in kitchen missing. Jackets, coats hanging up on food storage racks. Cigarettes on shelf at dry storage building.

Score: 88, Grade: B

Food employee drink in disposable cup, however, with no lid and straw, and located on food prep board on hot-hold line. Lemon slicer, tomato slicer, ladle and can opener stored with food debris, residue. Ice scoop stored inside of ice machine which is not clean. Hand sinks in restrooms and by hot-hold line not supplying hot water at 100 degrees (temping 74 to 77 degrees). Hole in wall by hot-hold line in kitchen. Floors in bar area have trash under sinks and equipment.

Meat sauce in upright cooler and lasagna in walk-in cooler both cooling from overnight with temps 48-51 degrees. Gaskets on pizza prep cooler either missing or damaged, creating large gaps, where cold air can escape.
