Kitchen Inspections for Jan. 24 - 28

The following are among the food service establishments inspected from Dec. 20-26 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Floors behind ice machine and equipment need cleaning. Cove baseboard missing at floor/wall junctures at walk-in coolers and freezers doors/walls. Light shield cracked in dry-storage area. Light bulbs over hot-food line not shatterproof. Personal jacket laying on shelf up front with items for customer.

Score: 88, Grade: B

Taco shells on shelf underneath cook line aren’t covered. Foods (cheese dip) start cooling in large containers that are deep. This will not allow foods to cool rapidly. Fish laying out in prep sink to thaw. Knife stored between prep cooler top and side and tape being used to hold knife. Holes in ceiling tiles above coolers, and ceiling tiles damaged over dishwashing area.

Raw eggs and beef sitting directly on top of ready-to-eat foods. Foods in coolers and freezers not covered. No dates on any foods. Beans, chicken, peppers on floor in kitchen in pans. Vegetable sink with dirty cups stored inside. Tongs stored hanging from splash guard at hand sink. Evidence of rodents in dry storage.

Overturned hotel pans on shelf below steam table and on shelving under prep tables with accumulation of food debris from prep above. Dishwasher not changing gloves between handling soiled kitchenware, utensils and unloading and putting away clean and sanitized kitchenware, utensils. Shelving under prep tables, steam table (for the storage of clean and sanitized kitchenware, utensils) with grease, dust, food (crumbs) accumulation. Floor needs a thorough cleaning at floor/wall juncture and corners behind equipment. Accumulation of dirt, food.
