Kitchen inspections for Feb 4 - 10

The following are among the food service establishments inspected from Feb. 4-10 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: "A" (90-100), "B" (80-89), "C" (70-79), "U" 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a food service permit for a change of ownership, the establishment must score a 95 (A) or above with all Foodborne Illness Risk factors and Public Health Interventions in compliance. Permits must be posted in public view at all times. Food service establishments with drive-through windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Many made-ahead leftover potentially hazardous food items not dated in reach-in and walk-in coolers. Many items with dates past seven-day use or discard time for potentially hazardous foods made at the restaurant and held over 24 hours. Shelving (plastic) needs cleaning in walk-in cooler (food debris spills). Floors need a detail cleaning at floor/wall junctures and under equipment; accumulation of food debris.

Dumpster pad dirty. Grease container had some accumulated grease on the outside, and dumpster doors open. Ceiling tiles sagging and some popped out of place. Some grout missing in tiles throughout kitchen. Light bulbs at roll prep area are not shatterproof. Light shields throughout kitchen have cracks or are damaged.

Many task changes and glove changes by employees, but no hand washing taking place. Travel coffee mug with straw for employee's drink in kitchen. Washed and cut broccoli put back into shipping box for storage in walk-in cooler. Cooked noodles cooling in collander loosely wrapped in grocery bag. Preparation tables with visible soil. Vegetable peelers stored after use with dried food debris. Cloth bucket for cleaning dining tables contains only soapy water. Wiping cloths lying on prep table. No sanitizing container set up for storage of wiping cloths in kitchen. Chicken pieces in vegetable sink. Wall/floor juncture (baseboard), stainless steel wall behind 3-compartment sink and floor needs better cleaning; food debris accumulation.
