Kitchen inspections for August 20-24

The following are among the food service establishments inspected from Aug. 20-24 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: "A" (90-100), "B" (80-89), "C" (70-79), "U" 69 and below.

Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.
A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a food service permit for a change of ownership, the establishment must score a 95 (A) or above with all Foodborne Illness Risk factors and Public Health Interventions in compliance. Permits must be posted in public view at all times. Food service establishments with drive-through windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Makeline cooler at 50 F, struggling to maintain required temperatures. Gaskets on some coolers damaged.

Many food items in storage in two-door cooler at cook line not covered. Knives, tongs slicer stored with visible food debris. Chemical sanitizing dish machine not dispensing any sanitizer in final rinse. Many precooked foods in cooler for several days not properly dated. Need to replace splashguard previously installed between sink compartments at two-compartment sink being used for vegetables and meat preparation. No test strips available for quaternary ammonium (quat) used as sanitizer in three-compartment sink. Dumpster missing drain plug. Ceiling panels damaged in wait station. Floor needs cleaning under coolers, tables, front dining wait area. Personal items - phone, keys - on cutting boards in kitchen.

Cutting boards for salads with visible accumulation of mold in scars. Food handler wearing bracelet that was touching food as prep took place. Sanitizer buckets all on floor. Bulk milk dispenser tube not cut at an angle to allow for excess (milk) to drip off. Cutting boards for salad prep all heavily scarred - no longer easily cleanable. Shelving above cook, sandwich assembly area needs cleaning - dusty. Shelving in walk-in cooler food debris hanging from it needs cleaning. Drink nozzles need cleaning around gasket that fits into dispenser. Floors need better cleaning underneath equipment throughout kitchen and dry storage - especially at floor/wall junctures. Ceiling vents and diffusers all dusty. Walls need cleaning; food splatters. Grease and dust accumulation next to Ansul canister above prep area. Walk-in cooler and freezer with accumulation of debris. Floors under soda dispensers (service area) with accumulation of trash and dried syrup. Mops and brooms dirty, wet in mop sink. Sippy cup (child's) in basin of shredder at start of inspection. Light lens over ice machine is cracked.

No dates on foods. Cloths used to wipe food contact surfaces stored in solution with dirty water. Remove all cardboard lining shelves, discard damaged cutting board - discard scoops made out of plastic bottles. Shelves, inside coolers with food residue - clean all areas - clean door gaskets and areas around gaskets. All walls need detailed cleaning.

Mold, mildew on interior surfaces of icemaker; food debris on can opener. Storage on floor in cooler, freezer, throughout kitchen. Buckets to transport waste have mold, mildew; shelving has food debris and grease. Grease container dripping in Dumpster enclosure. Floors throughout need detailed cleaning, especially under equipment, shelving, etc. Hood system needs immediate attention.
